I love BBQ Pork Stuffed Potatoes! My Barbecue Pork recipe is to die for anyway. Combine that with baking potatoes and you have a meal made in heaven. And, that’s what I did. 🙂

I had a couple of pork tenderloins that I needed to clear out of my freezer. I cooked them overnight in my crockpot and then added the normal BBQ sauce from my Barbecue Pork recipe. Then I used the Barbecue Pork to stuff the Baked Potatoes for our church’s college group dinner one Sunday night. I added some Creamy Sweet Corn (a recipe they also love) and plenty of salad.
I made a LOT of stuff. A lot of Barbecue Pork and a lot of baked potatoes. So since I had so much left over, I decided to serve it to my oldest son and his wife for lunch a few days later. Albeit with a makeover. This time I served the Barbecue Pork plain, but I took all the potatoes and mashed them and made them into a Seasoned Mashed Potatoes Casserole. Creamy Sweet Corn and a salad were also on the menu. So that meal got double duty and everyone was a happy camper.
The nice thing about BBQ Pork Stuffed Potatoes is you can serve them anytime during the year. Quite frankly, they’re actually quite easy to make too. If all the ingredients in your BBQ sauce are gluten free, the recipe is also gluten free. You can even make up the Barbecue Pork in advance and then add it to the potatoes a few days later, if desired.

This entree is delicious served with Creamy Sweet Corn.
Here’s what I did.
I used these ingredients, plus a batch of Barbecue Pork.
Wash baking potatoes. Prick with a fork.
I had so many potatoes that I baked them on cookie sheets.
Bake at 400 degrees about an hour and a half or until potatoes are fork tender.
Split potatoes and open up.
Fill potatoes with Barbecue Pork.
These potatoes are whoppers. They really make up one very satisfying meal.

This is such a scrumptious, stick-to-the-ribs meal. If you have family members that enjoy “meat and potatoes” meals, this one is right up their alley. 🙂 It’s even better with a side of Creamy Sweet Corn.

BBQ PORK STUFFED POTATOES

BBQ Pork Stuffed Potatoes
Equipment
- 1 large cookie sheet
- 1 fork to prick potatoes
- 1 wooden spoon
Ingredients
- 6 cups Barbecue Pork (See link to recipe below)
- 8 large baking potatoes
Instructions
- Wash potatoes; prick with a fork.
- Place potatoes on a cookie sheet.
- Bake potatoes in 400 degree oven about an hour to an hour and a half, or until done.
- Remove from oven.
- Slice the tops of the potatoes.
- Fill each with about ½ to 2/3 cup Barbecue Pork.
- Serve.

Love it! But me being moi, I would need something a little, ahem, creamy on top!
I will experiment and see if I can’t come up with a healthy version, LOL!

Hi, Richard, You could always add a slab of cheese. 🙂 Not particularly healthy but…. If you want healthier, you could make this with pulled chicken instead. Enjoy.
