Au Gratin Pork Chops
Au Gratin Pork Chops are awesome. This simple and easy recipe is a fantastic one-dish meal. Plus, it only calls for a handful of ingredients. It uses two boxes of Au Gratin Potatoes. While all the potatoes are put in the bottom of the dish, the au gratin sauce is mixed with cream of mushroom soup for the bottom layer. The other au gratin packet is mixed with cheddar cheese soup to pour over the top. It also includes a layer of frozen French-style green beans. And, of course, pork chops!

I recommend the pork chops be no more than a half-inch thick. Otherwise, they will take longer to cook than the potatoes and green beans. I used boneless pork chops, but you can use bone-in, if you desire. Although the ease of boneless pork chops is terrific for this recipe.
I made this entree back in May when we were closed in for a couple of months due to Corona Virus. I found it in an old cookbook and thought it would be super easy. It was. I also recommend this recipe, but substituting boneless chicken breasts or thighs as well. If you can’t do pork, that’s a great alternative. We served this delicious entree with Yellow Squash and Tomatoes. Everything was succulent and amazing.
Au Gratin Pork Chops is a layered casserole that includes everything in one dish. It has a layer of au gratin potatoes, a layer of green beans and a layer of pork chops. The sauces that are poured over top make this recipe something special. If you want a delightful week night supper meal, this is it.

This is a delightful way to eat pork chops.
I served Au Gratin Pork Chops with Yellow Squash and Tomatoes.
Every forkful was fantastic. It was even better with a side of Yellow Squash and Tomatoes!
Here’s what I did.
I used these ingredients.
Pour the potatoes from both boxes of Au Gratin Potatoes into a greased 9×13″ glass baking dish.
Combine one of the Au Gratin seasoning packets, a can of cream of mushroom soup and half-and-half.
Whisk mixture to combine.
Pour the cream of mushroom soup mixture evenly over top of the potatoes in baking dish. Sprinkle with fresh chives.
Spread frozen (unthawed) French-style green beans over top of potatoes.
Place six or eight pork chops over top. (I only had three. But there’s enough potatoes and green beans for 8 servings.)
Combine remaining seasoning packet from Au Gratin potatoes, cheddar cheese soup and half-and-half.
Whisk ingredients to combine.
Pour cheddar cheese mixture over top of pork chops and green beans in casserole dish.
Cover with foil and bake for 45 to 55 minutes or until mixture becomes bubbly. Remove foil. Bake an additional 20-25 minutes longer, or until pork chops are done and juices run clear. Sprinkle with fresh chives to serve.
Again, it’s really important that your pork chops are not more than half an inch thick. Otherwise, the potatoes and green beans will overcook, especially if you have to cook the pork chops another half hour or more to be done.

Au Gratin Pork Chops
Equipment
- 1 9x13" glass baking dish
- 1 small mixing bowl
- 1 wooden spoon
- aluminum foil
- 1 sharp knife or scissors to snip chives
- measuring spoons
Ingredients
- 9.4 oz. pkg. Au Gratin Potatoes (two 4.7-ounce boxes)
- 10.75 oz. can condensed cream of mushroom soup undiluted
- 2 cups half-and-half divided use
- 16 oz. pkg. frozen French-style green beans
- 6 boneless pork loin chops (1/2-inch thick and 4 ounces each)
- 10.75 oz. can condensed cheddar cheese soup undiluted
- 1 tbsp. fresh, snipped chives divided use
Instructions
- Preheat oven to 350°.
- Place dried potatoes into a greased 9x13” glass baking dish.
- Spread evenly to cover dish.
- Combine mushroom soup, one cup half-and-half, and the contents of one sauce mix package in a small mixing bowl.
- Pour mixture evenly over top of potatoes in baking dish.
- Sprinkle with 1 ½ teaspoons fresh, snipped chives.
- Top with green beans, then pork chops.
- Combine cheese soup, remaining half-and-half and the contents of the other remaining sauce packet.
- Pour mixture over top of pork chops and green beans.
- Cover with foil and bake at 350° for 45-50 minutes or until bubbly.
- Remove foil.
- Bake an additional 20-25 minutes longer, until pork chops brown lightly on top and meat juices run clear.
- Garnish with remaining 1 ½ teaspoons fresh, snipped chives.
