Cherry White Chocolate Brownies
Christmas Cookie Extravaganza – 2021
As this recipe gets posted, we are almost finished with all of our Christmas baking this year. Whew! It’s kept us busy for the month of October and even into November. I have an upright freezer filled with over 3,000 cookies, and a smaller freezer with another 1,500 or so, plus cookies, cakes, pie, breads, sweet rolls and muffins! Cherry White Chocolate Brownies were one of my favorites.

Paradise Fruit Company sent me quite a selection of their fruits to try out in recipes. So I had a lot of fun making lots of new recipes for the holidays this year. I used their red cherries in this recipe. I added coconut, pecans and real white chocolate chips to the batter. It’s hard to find real white chocolate chips in the Dallas/Fort Worth area. You can get vanilla chips or premiere white baking chips. The only stores that carry true white chocolate chips are Kroger (private selection) and Trader Joe’s! But white chocolate adds breathtaking flavor to these brownies in my opinion.
Cherry White Chocolate Brownies are rich, decadent, festive and elegant enough for any holiday or Christmas party. I recommend them for Christmas Cookie Exchanges, too. The gooey texture will have you salivating from the first bite. If you enjoy cherries, the flavors mingle together really well.

Here’s what I did.
I used these ingredients.
Soften butter, add sugar, brown sugar, eggs, half-and-half or milk, baking soda and salt. (These pictures show four batches of this recipe).
Mix with an electric mixer until thoroughly blended.
Chop candied cherries and set aside.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add coconut, cherries, pecans and white chocolate chips (NOT vanilla chips).
Stir ingredients really well to combine.
If making a single batch, spread into a greased 9×13″ glass baking dish. This picture shows a double batch of the cookie dough. I spread it into a greased 12×17″ baking pan. Pat the mixture down into the pan with moist hands.
Bake at 375 degrees for 20-30 minutes. My double batch took 35-37 minutes. Test with a toothpick inserted in center for doneness.
Allow the brownies to cool completely before cutting into bars.

CHERRY WHITE CHOCOLATE BROWNIES
(My own concoction)
Cherry White Chocolate Brownies
Equipment
- 1 9x13" glass baking dish
- 1 large mixing bowl
- 1 wooden spoon
- 1 electric mixer
- 1 sharp knife to chop candied cherries
Ingredients
- 1 cup light brown sugar packed
- 3/4 cup unsalted butter softened (1 1/2 sticks)
- 1 large egg
- 2 tbsp. half-and-half or milk
- 1 tsp. real vanilla extract
- 2 cups UNBLEACHED all-purpose flour (Bleached flour toughens baked goods)
- 1/2 tsp. sea salt
- 1/2 tsp. baking soda
- 1 cup candied red cherries chopped
- 1 cup pecans chopped
- 1 cup coconut
- 11.5 oz. bag white chocolate chips NOT vanilla chips or premiere white baking chips
Instructions
- In a large mixing bowl, cream brown sugar, butter, egg, milk, vanilla, salt and baking soda with an electric mixer until smooth.
- Fold in flour, cherries, pecans, coconut and white chocolate chips with a wooden spoon.
- Pat the mixture down into a greased 9x13” glass baking dish. (I had to keep my hands moist to do this).
- Bake at 375° for approximately 20-30 minutes or until golden brown.
