Herb Roasted Parmesan Potatoes

I’ve been wanting to try out this recipe for quite some time. I like working with red potatoes. They have a different taste than regular potatoes. Herb Roasted Parmesan Potatoes was born out of my desire to roast potatoes with lots of herbs, but also have a sprinkling of parmesan cheese over top for even more flavor. The result was fantastic. No kidding.

I had planned on trying out a new chicken thigh recipe a few weeks ago. I wanted a side dish to go along with it, and thought this tasty dish would work well. Actually, the two dishes paired wonderfully together. I added some homemade no-knead dinner rolls and I had a match made in heaven. Oh, that was one delicious meal.
Herb Roasted Parmesan Potatoes are so easy to throw together. I sprayed them with olive oil rather than coating the potato chunks to lower the calories. Then I sprinkled dried herbs over top. If you have fresh herbs, that would be even better. After that I sprinkled the potatoes with grated parmesan cheese. Pop the cookie sheet in the oven and bake. It’s too easy.
This is a terrific side dish for company dinners or holidays too. We enjoyed it for a simple family dinner and could have eaten just potatoes for that meal and been equally happy. 🙂 Give this easy side dish a try the next time you want to do something a little different with potatoes. You will enjoy every forkful.
Herb Roasted Parmesan Potatoes are wonderful!
I served the Potatoes with Creamy Garlic Mushroom Chicken Thighs and homemade Easy No-Knead Dinner Rolls.
I seasoned the potatoes with thyme, rosemary and parsley, along with garlic salt and pepper.
Here’s what I did.
i used these ingredients.
Scrub the potatoes well. Cut in quarters or chunks and place on parchment paper-lined cookie sheet.
Spray potatoes lightly with olive oil.
Sprinkle potatoes with garlic salt, pepper, thyme, rosemary and parsley.
Sprinkle half of the grated parmesan cheese lightly over top but well enough to cover each potato.
Bake at 350 degrees for 20 minutes. Remove potatoes from oven and turn pieces over with a spatula. Sprinkle with remaining parmesan cheese. Return to oven and bake potatoes an additional 20-25 minutes or until soft and tender and pierce easily with a fork.
Serve potatoes garnished with fresh thyme or rosemary, if desired.
Herb Roasted Parmesan Potatoes are excellent warmed up for leftovers, too!

HERB ROASTED PARMESAN POTATOES
(My own concoction)
Herb Roasted Parmesan Potatoes
Equipment
- 1 18x26" cookie sheet pan
- parchment paper
- 1 sharp knife to cut vegetables
- 1 pastry brush
- measuring cups
- measuring spoons
- 1 spatula
Ingredients
- 2 lbs. petite red potatoes washed and cubed (or quartered)
- 1/4 cup olive oil or avocado oil
- 1/2 tsp. dried thyme
- 1/2 tsp. dried rosemary
- 1 tsp. dried parsley
- 1 tsp. garlic salt
- 1/4 tsp. ground black pepper
- 1/2 cup grated parmesan cheese divided use
Instructions
- Spread potatoes evenly on a parchment paper-lined cookie sheet.
- Spray or drizzle with olive oil. (You can also use a pastry brush).
- Sprinkle herbs, garlic salt and pepper over top.
- Sprinkle half of the Parmesan cheese over top of the herbs.
- Bake at 350° for approximately 20 minutes.
- Turn potatoes over with spatula and sprinkle with remaining Parmesan cheese.
- Cook an additional 20-25 minutes or until potatoes are fork tender.
