Parmesan Potatoes with Thyme
Parmesan Potatoes with Thyme is a savory side dish that’s succulent and amazing. Parmesan cheese is mixed with garlic salt, lemon pepper and thyme. Then the cheese mixture is sprinkled over the potato mixture and drizzled with avocado oil before baking.

I used a spiralizer for the potatoes so they look absolutely delightful. These potatoes are quick, easy and so delicious. You can use this basic seasoning with lots of different veggies: sweet potatoes, yellow squash, zucchini, eggplant, and beets! Yes, I said beets. I think it would also taste good with green beans, broccoli and asparagus if you have a garden full of those yummy veggies growing.
This delicious seasoning was inspired from a recipe I use for chicken. I tried it today on golden beets and potatoes. It turned out incredibly well with potatoes but, then, I love potatoes! If you want a tasty, low calorie way to bake potatoes and add a new side dish to your repertoire, this recipe will do it.
Parmesan Potatoes with Thyme is one of those side dishes you can throw together for company, holidays, and special occasions. It’s also economical and a great way to get your kids to eat up their veggies!
When I initially posted this recipe in August 2012, I was still in the very early stages of my blog. My food presentation as well as the iPhone 3 used for a camera made this terrific recipe look dreadful. 🙁
I recently remade this recipe (June 2016) for dinner along with some hamburgers and it was certainly a hit. Last time I cut the potatoes like steak fries. This time the spiralizer made the potatoes noodle-like in texture which was really adorable. This side dish is wonderful with any main dish. It’s also a lower calorie and gluten free way to prepare potatoes than many recipes.
Parmesan Potatoes with Thyme are so delicious. This is a great side for any meat entree.
Parmesan Potatoes with Thyme are seasoned so nicely and have a light coating from the Parmesan cheese and seasonings.
Parmesan Potatoes with Thyme is drizzled with avocado oil before baking. The potatoes bake up nice and lightly crunchy.
Here’s what I did.
I used these ingredients.
Peel and slice down potatoes. Spiralize them with a spiralizer. I started with a curly fries blade and then decided to go smaller and use a much smaller one.
Spray a 9×13″ glass baking dish with olive oil cooking spray. Add potatoes.
Mix seasonings and parmesan cheese.
Stir to combine.
Sprinkle the cheese mixture over top of the potatoes and kind of work it into the potatoes. Drizzle avocado oil over top of potatoes.
Bake at 400 for about 20-30 minutes or until nicely browned. I seasoned with a little fresh lemon thyme on top.
Serve potatoes as is, or sprinkled with more parmesan cheese, if desired. This recipe is gluten free.

Parmesan Potatoes with Thyme
Equipment
- 1 spiralizer
- 1 baking dish
- 1 vegetable peeler
- 1 small bowl
- 1 wooden spoon
- measuring cups
- measuring spoons
Ingredients
- 2 large potatoes or 4 small potatoes, peeled and sliced into French-fry shapes or spiralized
- 1/3 cup Parmesan cheese grated
- 1 tsp. lemon pepper
- 3/4 tsp. garlic salt
- 1 tsp. dried thyme
- 1 tbsp. olive oil or avocado oil, as needed
Instructions
- Preheat oven to 400°.
- Peel potatoes, slice in strips like French fries or spiralize.
- Set aside.
- Mix Parmesan cheese, lemon pepper, garlic salt, and thyme in a small bowl.
- Place potatoes in a greased 9x13” glass baking dish.
- Sprinkle parmesan cheese mixture on top.
- Drizzle olive oil or avocado oil over top of potatoes.
- Bake at 400° for about 20-30 minutes or until lightly browned.
