I love baking homemade bread in my breadmaker. Rarely do I take a meal to anyone where I don’t bring include a loaf of fresh bread along with all the other fixings.

I like the fact that I can usually have most of these loaves ready to go in about 5 or 10 minutes and I don’t have to do anything for a few hours. Then once the bread is done, I butter the tops and sides and slice it down so it’s ready to eat. I love homemade bread hot and fresh out of the breadmaker, but more often than not, I serve it toasted with jelly, apple butter, honey, butter or peanut butter spread over the top. Ummmmmmmm. Why? Because that’s the way my mom always served it. She always broiled the bread in the oven for a few minutes with butter already on it. Then she’d serve it with assorted jellies and preserves for dinner. Yes, homemade bread was a staple at our house growing up.
I have a few recommendations if you want your bread to turn out correctly.
1) Don’t fiddle with the recipe too much. If you increase the sugar it will usually cause problems with the loaf not raising properly or turning out so well.
2) ALWAYS use bread flour when a recipe calls for flour. NEVER use all-purpose flour as the bread tends to get crumbly. Since there is less gluten in bleached flours the ingredients don’t adhere to each other quite as well.
3) Butter the sides and top of the bread about 15 minutes after the bread has finished baking. This will prevent the crust from hardening too much and losing a tooth on hard crust!
4) When using whole wheat flour, ALWAYS add 4 teaspoons per loaf of vital wheat gluten. (Some of my older recipes may not include this tip, but I highly recommend it). Wheat flour is very dense and it doesn’t raise as well. You need the extra gluten to help it raise properly. Otherwise, you will end up with hockey pucks like Ellie Mae Clampett used to make on the Beverly Hillbillies!
5) After about two days, refrigerate or freeze the bread. Since homemade bread has no preservatives it will get moldy much more quickly than store bought bread.
