Coconut Pecan Pie Bars
Oh my gosh, Coconut Pecan Pie Bars are phenomenal! These rich, decadent brownie-type cookies are so amazing you’ll be drooling over every bite. Granted, I know a lot of people don’t do coconut or nuts these days. But if you enjoy coconut and pecans, and you like pecan pie, then you’ve got to give these drool-ilicious bars a try. Seriously, you’ll think you’re in seventh heaven. 🙂

Back in February our church hosted a youth weekend emphasizing discipleship. The kids broke up into groups by gender and age and went to different host homes in our church family. Saturday for lunch, the kids were having pizza. I got a call from one of our youth leaders asking me if I would consider baking a dessert. I rarely pass up that kind of opportunity. 😉
As it happened, I really needed to clean out several ingredients from my pantry (left over from holiday baking). Those things included coconut, pecans, sprinkles, and various kinds of chips (sea salt caramel, chocolate chunks and miniature chocolate chips). So I made up eight pans of goodies totaling almost 200 pieces of brownies. I made Chocaroons, Fudgy Sprinkle Brownies, Sea Salt Caramel and Chocolate Chunk Brownies and these delicious jewels. I was totally glad to clear out my pantry a little, and everyone else loved the brownies.
I started with my Chocolate Pecan Pie Bars recipe. But instead of using chocolate, I decided to try them with coconut instead. Obviously, chocolate is good with anything, but these bars made with coconut were terrific too. I recommend them for holiday baking, potlucks, backyard barbecues, baby showers or tailgating parties. Believe me, they’ll be snatched up in no time.
This is a dessert to make if you’re looking for a fabulous brownie to wow your company and friends. And, if you enjoy coconut and pecans, then Coconut Pecan Pie Bars need to be on your “to-make” list immediately! Be prepared to drool….especially if you dollop the brownies with ice cream and caramel sauce. 🙂

Here’s what I did.
I used these ingredients.
Melt 3 tbsp. butter. Add flour, 1/4 cup brown sugar and 1/2 cup coconut.
Stir ingredients to combine.
Press into a greased 9×13″ baking sheet. Bake for 10 minutes at 350.
In a mixing bowl, add eggs, remaining melted butter, remaining brown sugar, pecans, remaining coconut and Karo syrup.
Stir ingredients with a wooden spoon to combine.
Pour over top of baked crust.
Bake an additional 40-50 minutes or until bars are set.
Cut into bars when cool.
Coconut Pecan Pie Bars are wonderful served a la mode with vanilla ice cream and caramel sauce. 🙂
These ooey, gooey bars are terrific for tailgating parties, potlucks and backyard barbecues.

COCONUT PECAN PIE BARS
(My own concoction)
Coconut Pecan Pie Bars
Equipment
- 1 9x13" glass baking dish
- 1 large mixing bowl
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 nut chopper if nuts are not previously chopped
- 1 medium mixing bowl
Ingredients
- 2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 2 large eggs beaten
- 1 cup pecans chopped (measure after chopping)
- 3 tbsp. unsalted butter melted
- 1 cup light brown sugar packed, divided use
- 1 cup unsalted butter melted
- 3/4 cup Karo light corn syrup
- 2 1/2 cups coconut divided use
Instructions
- In a large bowl, melt one cup butter.
- Add flour, ¼ cup brown sugar and ½ cup coconut.
- Stir with a wooden spoon until mixture is crumbly.
- Press onto bottom and ½” up sides of greased 9x13” baking dish.
- Bake in 350° oven for 10 minutes.
- In medium bowl, melt remaining 3 tablespoons butter in microwave.
- Cool for about 3-5 minutes.
- Add eggs, corn syrup, remaining ¾ cup brown sugar, pecans and remaining 2 cups coconut.
- Stir well to combine.
- Pour over baked crust.
- Bake in 350° oven for 40-50 minutes or until filling is set.
- Cool and cut into bars.
