I was looking at some recipes the other day and found this one for Lazy Cake Cookies made with a cake mix. My imagination began spinning and I wondered if I couldn’t come up with something to use up some red velvet cake mixes I had leftover from Christmas. I also recently purchased a cherry-chocolate M&Ms package that I wanted to use in some way and decided to give it a whirl!
This quick and easy recipe has only a handful of ingredients and it tastes wonderful. It’s filled with lots of chocolaty flavor intermingled with cherry flavor from the cherry flavored M&Ms. Then it has a double dose of chocolate with the M&Ms (being both cherry and chocolate). On top of that it has a triple dose of chocolate with a chocolate glaze drizzled over the top. Does this sound amazing or what??? On top of that, these festive brownies are elegant and beautiful, too.
As the years have gone by I’ve become more adventurous in the kitchen and cookies are one of the things I really like to play around with. I’m not going to lie and say I haven’t had a few failures along the way, but this isn’t one of them! I love mixing up recipes and taking a little of this and a little of that from favorite, cherished recipes and putting them together with a new spin. Not only does this great recipe have a red velvet spin, it has a black forest spin! If you like cherries and chocolate you will love this fabulous brownie.

These luscious Red Velvet Cherry Chocolate Brownies are oh so rich, chewy, delectable!
These brownies are so quick and easy to make. The brownie only has only 4 ingredients and the icing consists of only 4 ingredients. It’s super easy starting with a red velvet cake mix. You can have the brownie portion whipped up in about 5 minutes. The icing doesn’t take much more time than that to make either.

Here’s what I did.
These are the 4 ingredients you’ll need for the brownie portion. I found these cute M&Ms – cherry-flavored at the store and thought they’d be great with a Red Velvet recipe.
Mash the red velvet cake mix with a potato masher. I know this seems crazy but these cake mixes have really hard clumps in them that need to be mashed to smooth out the texture so it doesn’t have a lot of lumps.
Add eggs.
Add melted butter.
I used these Cherry/Chocolate M&Ms .
Add half of the bag to the red velvet cake mixture.
Mix all the ingredients together with a wooden spoon.
Spray a 9×13″ baking pan or dish with cooking spray.
Spread red velvet mixture into baking pan.
Sprinkle remaining cherry/chocolate M&Ms on top of the brownie dough.
Bake at 350 about 20 minutes until toothpick inserted in center comes out clean. Allow brownies to cool.
While brownies are cooling mix up chocolate icing. Measure out cocoa and powdered sugar in a medium sized mixing bowl.
Stir together.
Add vanilla.
Add water a tablespoon at a time to get the right spreading consistency. This is somewhere between 2 and 4 tablespoons water.
Whisk mixture.
Here the chocolate mixture is of spreading consistency.
You can see the thickness of the icing from this picture.
Spoon chocolate glaze into a plastic bag. Cut off the tip of the bag.
Press chocolate mixture down to the point where the tip was cut and pipe chocolate glaze over top of the brownies.
Here I’ve piped the icing diagonally over top of the brownies in one direction.
Now I’ve piped the chocolate glaze in the opposite direction over top of the brownies.

RED VELVET CHERRY CHOCOLATE BROWNIES
(Recipe inspired by Crafting and Cooking and I’m A Lazy Mom)
1 Red Velvet cake mix
1 stick butter, melted
2 eggs
9.9-oz. bag M&M’s cherry/chocolate flavor, divided use
Pour cake mix into mixing bowl. Mash down lumps with potato masher. (Otherwise you will not be able to get all the lumps out when mixing and you will overmix the dough). Add butter, eggs, and ½ of the cherry/chocolate-flavored M&Ms. Spray 9×13” baking pan or dish with cooking spray. Spread dough into pan and press in place with fork. Layer will be thin. Spread remaining cherry/chocolate flavored M&Ms over top of the dough. Bake at 350° for about 20 minutes or until brownies test done with a toothpick. Cool. Drizzle icing over top. Makes 24 brownies.
CHOCOLATE ICING:
(My own concoction)
2 heaping tbsp. cocoa
1 cup powdered sugar
1 tsp. vanilla
2-4 tbsp. water, as needed to make of correct spreading consistency.
Stir cocoa and powdered sugar together. Add vanilla and water a tablespoon at a time and whisk until you reach a good spreading consistency. Transfer mixture to plastic bag. Cut off corner. Pipe chocolate mixture over top of brownies and allow to set and cool completely. Cut into 24 brownies.

Wonderful! I found the cherry flavored M&Ms at Wal-Mart on the Valentine’s Day candy aisle. They had several different kinds. If you really want amazing use a whole bag of M&Ms in the brownie and another bag or half bag on top!
I love it when I see well worn bakeware. They may not be shiny anymore, but the scars and scraches tell of great dishes that came before. I also use extra red velvet cake mix to make whoopie pies.
Yes, these old pans were given to me by my mom back in the mid 70s and they weren’t new at the time, so yes, with almost 34 years of Christmas Cookie Extravaganzas and so many other times I’ve baked cookies and other stuff in these pans they have seen a lot of duty over the years.
