Chocolate lovers, this amazing dessert bar is absolutely divine! It’s filled with an ooey gooey cream cheese and powdered sugar icing-type filling on a base of rich, chocolate Red Velvet and topped with luscious red chocolate chips. A dusting with confectioners’ sugar finishes it off. Double the chocolate, double delicious, double decadent, and double amazing. These wonderful dessert bars are elegant, classy, filled with Red Velvet goodness and perfect for holiday entertaining or Valentine’s Day.
I love Ooey Gooey Butter Cake and I decided I wanted to try my hand at making a Red Velvet variety. I used my basic Ooey Gooey Butter Cake recipe and switched out the regular yellow cake mix for a Red Velvet cake mix instead. I left the cream cheese filling the same except to color it with red food coloring. Then I added red chocolate chips on top. Voila! Extra rich, chocolatey Red Velvet Gooey Butter Cake Bars. Oh, my!

Here’s what I did.
These are the ingredients I used.
For the crust: melt butter in a medium mixing bowl.
Add Red Velvet cake mix.
Add egg.
Stir ingredients together with a fork, mashing any lumps from the cake mix until the dough is thoroughly mixed.
Spray 9×13″ baking pan with cooking spray.
Spread cake mix mixture into bottom of sprayed pan.
To make filling: soften cream cheese.
Add eggs.
Add powdered sugar.
Add a tube of red gel food coloring. You can add a tablespoon of vanilla too, if you desire. I meant to add it and forgot.
Mix all the ingredients together with an electric mixer until well mixed.
Spread cream cheese mixture over top of crust layer.
I used all of the red chocolate chips from this package. It was slightly over 1/2 cup. I’ll use the green ones for something for St. Patty’s Day!
Sprinkle red chocolate chips over top.
Bake at 350 for 45-50 minutes. Don’t overbake!
Cool in pan about 10 minutes. Sprinkle heavily with powdered sugar.
When pan is completely cool cut into bars.

RED VELVET GOOEY BUTTER CAKE BARS
(Recipe adapted from Angela Russell’s “Ooey Gooey Butter Cake Squares” when we attended Hillcrest Baptist Church, Cedar Hill, TX, and Duncan Hines Red Velvet Gooey Butter Cake)
1 Red Velvet cake mix
1 stick butter, melted
1 egg
1 8-oz. pkg. cream cheese, softened
2 eggs
3 cups powdered sugar
1 tbsp. vanilla, if desired
1 .68-oz. red gel food coloring (more concentrated than liquid)
½ cup red chocolate chips
powdered sugar for garnish
Mix cake mix, butter, and egg together. Press into a greased 9×13” baking pan or dish (or spray with cooking spray). Mix cream cheese, 2 eggs, powdered sugar, and food coloring until well mixed. (Add vanilla, if desired). Spread over top of crust layer. Sprinkle red chocolate chips over top. Bake at 350° for 45-50 minutes. Do not overbake. Remove from oven. Cool 5-10 minutes. Sprinkle heavily with powdered sugar. Cut into bars when cool. Serves 24.
