Ultimate Reese’s Peanut Butter Cookies

Okay, get this: Ultimate Reese’s Peanut Butter Cookies! And when I say U-L-T-I-M-A-T-E, I mean ULTIMATE! 🙂 These spectacular cookies start with my favorite chocolate chip cookie dough (Mrs. Field’s copycat recipe) and substitute peanut butter chips and Reese’s peanut butter cups instead. Talk about amazing.

Every now and then I have to bake up cookies to restock our freezer. John usually takes out one or two containers every week and gives them away. I was getting a little low a few weeks ago and looked in my pantry and saw a bag of peanut butter chips and some Reese’s peanut butter cups that looked like they needed a new home. 🙂 Well they found their new home in this delicious recipe. I was ecstatic with the way these heavenly cookies turned out.

If you’re looking for a way to use up Halloween candy, or want to spring a great new cookie on friends this fall or for Christmas baking, I can’t recommend Ultimate Reese’s Peanut Butter Cookies enough. They’re rich in chocolate and peanut butter flavors. In fact, the cookie is so decadent you will be hard pressed to stop at just one. You may have to give most of them away like I did….that is if you want to keep your school boy or school girl figure.  Just saying….

Place softened butter in a mixing bowl. Add sugar, granulated sugar, eggs, vanilla, baking soda, baking powder and salt.

Cream ingredients with an electric mixer until smooth.

Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add peanut butter chips and Reese’s peanut butter cups.

Stir ingredients with a wooden spoon until combined.

Spray cookie sheets with cooking spray. Roll dough into balls and place on prepared cookie sheets.

Bake at 350 for 13-15 minutes or until done. (My cookies took about 20 minutes to bake).

They use an amazing Mrs. Field's copycat recipe for chocolate chip cookies.   • 2 18x26" cookie sheet pans
  • 1 large mixing bowl
  • 1 electric mixer
  • 1 wooden spoon
  • 1 spatula
  • 1 sharp knife to chop Reese's cups
  • measuring cups
  • measuring spoons

Ingredients
  

  • 1 cup unsalted butter softened (2 sticks)
  • 1/2 cup granulated sugar
  • 1 1/2 cups brown sugar packed
  • 2 large eggs
  • 2 1/2 tsp. real vanilla extract (no imitation vanilla flavoring)
  • 3 1/2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 3/4 tsp. sea salt
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 2 cups Reese's miniature peanut butter cups quartered
  • 10-oz. pkg. Reese's peanut butter chips

Instructions
 

  • Preheat oven to 350°.
  • In a large mixing bowl, mix the butter, sugars, eggs, vanilla, salt, baking powder and baking soda with an electric mixer until smooth.
  • Stir in flour, peanut butter candies and peanut butter chips with a wooden spoon to combine.
  • Shape dough with hands into golf ball-sized dough balls and place a couple inches apart on greased cookie sheets.
  • Bake for 13-15 minutes or until edges are light brown.
  • Rotate cookie sheets on racks about every 7 minutes while baking.
  • Cool completely.

Notes

NOTE: There are times when I’m making a double batch of this recipe where I have to add an additional quarter to half cup of flour in order to be able to roll the dough into balls. If the dough gets too sticky. Add a little flour to the batter.
 
NOTE: My cookies took almost 20 minutes to bake.

    What if the dough is too dry or like won’t clump very well?

      You need a little more moisture or use less flour. Either a little bit of egg or butter will bring it around. Some flours seem thicker than others. Maybe next time reduce by 1/4 to 1/3 cup on the flour.

    Bought a bag of peanut butter chips by mistake and decided to try this as an experiment. One of the best cookies I have ever made – and we don’t even like Reese’s cups or peanut butter!
