Baked Apple French Toast is so awesome! It’s a tasty breakfast or brunch entree with apple pie filling on the bottom. Then it’s topped with a custard and cinnamon-raisin toast on top. To serve the dish, you actually invert the apples so that the Cinnamon Raisin toast is on the bottom and the apple pie filling is on the top.

This dish went over with a bang the first time we ever served it. Everyone loved it and wanted more. The great thing about this recipe is you can use ANY kind of pie filling you desire: cherry, strawberry, pineapple, blueberry or even peach. My spectacular Baked Peach French Toast is also a worthy choice for a special holiday breakfast or special occasion brunch.

When we attended Hillcrest Baptist Church in Cedar Hill, Texas, our Sunday school class used to make BIG breakfasts every week. I mean BIG! Everyone signed up for a Sunday and usually no one had to make breakfast more than four times a year.

On Sunday mornings everyone would bring in their favorite breakfast recipes. Sometimes folks would try out something new on the rest of us. All of us were very happy guinea pigs and always enjoyed something different. I collected about 50 fabulous breakfast recipes that way. (Most of which have not yet been posted here…..some day!) On one of those occasions, I was perusing my Taste of Home cookbook collection and stumbled across this recipe. I decided to give it a go and I’m so glad I did.

This recipe does not have to be made the night before. But you can prepare it the night before and bake it the next day if you desire. It’s really a fairly quick and easy recipe too. I like the fact that you can use French bread, but you can also use raisin-cinnamon bread as well to give it a little more pizazz. However, French Bread is definitely sturdier which makes the recipe easier to pull together.

Baked Apple French Toast is an excellent choice for a holiday breakfast or brunch. I highly recommend it for Thanksgiving, Christmas, Easter & even Mother’s Day. Since it bakes in 30 minutes you can have a delicious hot breakfast ready for your family quite quickly. You can also serve this amazing dish for dinner!

I found the original recipe in Taste of Home’s 50th Anniversary Cookbook. I’ve adapted it a LOT. But I think you will like the extra tweaks that make this recipe special.

Spread a can of apple pie filling in the bottom of a 9×13″ glass baking dish that has been sprayed with cooking spray.

Add vanilla and whisk to combine.

Dip bread slices into egg mixture and soak on both sides – this will take about 15 seconds.

In a small bowl add cinnamon and sugar. Stir cinnamon-sugar mixture to combine.

Melt butter in glass baking dish in microwave. Brush butter over top of bread slices.

Sprinkle with cinnamon sugar mixture.

TIP:

This is a lot easier to do if you do one slice at a time. Example: Dip one slice of bread in egg mixture. Layer on top of apple pie filling. Brush with melted butter. Sprinkle cinnamon sugar over bread. Repeat laying another slice of soaked bread on top of the other slice leaving about a two-inch overlap. Repeat, until you run out of room in your pan for bread slices!

Bake 30-35 minutes at 350. (You may want to cover the dish with foil so the bread doesn’t get overly brown).

To serve: Cut bread with spatula. Lift bread out of casserole and invert onto plate so that apple slices are now on top of the bread!

This lovely breakfast casserole is wonderful for a holiday or special occasion breakfast like Thanksgiving, Christmas, Easter or Mother's Day. Apple pie filling is layered in the bottom, then custard-soaked cinnamon-raisin bread slices are layered on top. The bread is spread with melted butter and cinnamon sugar before baking.   • 1 9x13" glass baking dish
  • 1 mixing bowl
  • 1 whisk
  • 1 wooden spoon
  • 1 pastry brush
  • 1 very small bowl
  • measuring cups
  • measuring spoons
  • 1 sharp bread knife to slice bread if using French bread

Ingredients
  

  • 21 oz. can apple pie filling or blueberry pie filling
  • 4 large eggs
  • 1 1/2 cups 2% milk
  • 1 1/2 tsp. vanilla extract
  • 10 slices day-old French bread or 8 slices day-old cinnamon-raisin bread
  • 2 tbsp. unsalted butter melted
  • 1/4 cup granulated sugar
  • 1 tsp. ground cinnamon

Instructions
 

  • Spoon pie filling into a greased 9x13” baking dish.
  • In a bowl, beat eggs, milk and vanilla with a whisk.
  • Dip bread slices in egg mixture for about 15-30 seconds; gently shake off excess.
  • Arrange 2 rows of bread on top of pie filling, overlapping slices slightly (if using French bread).
  • Brush bread with melted butter.
  • Combine sugar and cinnamon in very small bowl.
  • Sprinkle with sugar and cinnamon.
  • Bake, uncovered, at 350° for 30-35 minutes or until lightly browned.
  • Serve fruit side up.

Notes

NOTE: This is much easier to prepare if you soak one piece of bread at a time. Place the soaked piece of bread on top of the apple pie filling, brush with butter, and sprinkle with cinnamon sugar mixture. Then repeat for each slice of bread. The bread is too soggy to lift without tearing if you do this all at once.
 
NOTE: I have prepared this before and allowed it to sit in the refrigerator overnight before baking like many other breakfast casseroles. It works fine that way, too.
 
NOTE: If you have very wide bread like the cinnamon-raisin bread I used, you will only be able to fit one row of bread slices in the baking dish.
