Roasted Paprika Corn

Roasted Paprika Corn has a wonderful, even delectable taste. The corn is spread with a butter sauce consisting of paprika, garlic salt, pepper and parsley. Then, I bake the corn in the oven wrapped in either waxed paper or aluminum foil. After 30 minutes in the oven the corn is ready. It’s a great side dish for my Barbecue Pork but it would work just as well with BBQ Brisket or any other main dish.
Years ago when we were visiting my sister-in-law she made a delicious grilled corn recipe with paprika, butter, salt and pepper that was sensational. When she told me what was in the corn, I couldn’t believe it.
I was in the mood for corn last week and wanted to do a take off on DeEtte’s grilled corn. But, instead, I wanted to roast the corn in the oven and add some parsley to the coating. There is just something about the combination of corn, butter, salt and paprika that tastes amazing to me! I never would have thought paprika would go well with corn-on-the-cob, but it is so flavorful.
This is a delightful and creative way to use up corn-on-the-cob from your garden or CSA. Because of the abundant and cheap supply at the grocery store at the moment, this is a tasty recipe you should give a try. On top of that, this six-ingredient recipe is so quick and easy, you can have this ready to go in the oven in about 5 minutes! And if you needed another reason, this is really inexpensive!
I initially posted this recipe in July 2013. My pictures were okay, but I wanted to remake this fantastic recipe again anyway.
Our church’s college group had a volleyball night a couple of weeks ago (July 2019). The director was making hamburgers and cheeseburgers and asked me to make baked beans. I also decided to remake this delicious corn and toss in a Kiwi-Strawberry Spinach Salad and some Oatmeal Scotchies.
The two dishes the kid’s raved about??? The corn and the salad. Go figure. 🙂
Roasted Paprika Corn is a wonderful side dish even kids will enjoy.
This corn recipe has only 6 ingredients. It’s so quick and easy to make up.
You can grill this on your gas grill, too, if you wrap the corn in aluminum foil.
Here’s what I did.
I used these ingredients. (I made 5 batches of the recipe).
Melt butter in glass measuring cup or mixing bowl.
Place seasonings on a plate.
Stir seasonings to combine.
Add seasonings to butter and stir to combine.
Place a corn cob on a piece of aluminum foil or waxed paper.
Brush corn with butter/paprika mixture. Coat the corn cob well.
Roll sides of foil to center.
Begin rolling up foil.
Wrap corn in aluminum foil or waxed paper and place in glass baking dish.
Bake at 350 for about 30 minutes.
Unwrap corn. Place on serving tray. Secure ends with corn skewers to serve, if desired.
Roasted Paprika Corn is a delicious side dish for barbecues or anytime you have your grill going.
Because you bake Roasted Paprika Corn in the oven you can serve this alongside any main dish and even bake it at the same time you are cooking other items in the oven.
Ah, yes, it certainly was delicious! Roasted Paprika Corn is healthy, gluten free, and low calorie. If you use avocado oil you can easily make this recipe vegan. I served it with Calico Baked Beans and Kielbasa.
Here’s the recipe.
ROASTED PAPRIKA CORN
(Recipe inspired from my sister-in-law, DeEtte Amspaugh, Safety Harbor, FL)
- 3-4 ears of corn, shucked
- 4 tbsp. butter, melted
- 2 tsp. paprika
- 1 tsp. garlic salt
- ½ tsp. pepper
- 1 tbsp. parsley
- Melt butter.
- Add seasonings and stir.
- Place a single corn cob on a piece of waxed paper.
- Brush butter/paprika mixture over top of corn to coat all sides.
- Fold side pieces to the center of the corn and then roll up corn.
- Place in glass baking dish and bake at 350° for about 30 minutes.
- Remove waxed paper.
- Secure ends of corn with corn skewers and serve.
This corn was really tasty. If you’re looking for an easy roasted corn recipe, this is certainly an easy one!
