Peach and Pecan Cookies
Peach and Pecan Cookies are terrific. Delicious sugar cookies are filled with fresh peaches and pecans and turn into one incredibly good cookie. I actually started off with the recipe for Mimi’s Potato Chip Cookies, but instead of using potato chips I used peaches. I loved the way these turned out.

The nice thing about Peach and Pecan Cookies is they only use 6 ingredients. So these cookies are really simple, yet quite delectable as well. I pressed the cookies down slightly with a fork before baking and sprinkled a little additional sugar over the tops. Thankfully, I packed these goodies away in cookie containers right away or I would have cleaned out the whole batch!
Many of you know I’ve been trying to use up peaches from all the peach trees in our back yard. I’ve been on a peach dessert roll in my efforts to turn out great tasting desserts filled with peaches. John likes to give cookies away as gifts frequently to folks he runs into so I’ve stashed about 30 containers of cookies into my freezers and asked him to start giving them away!
While I’ve made several cakes, desserts and cobblers with the peaches, this was my first effort at cookies. I was brainstorming what recipes I could use where peaches could be either added or replace other ingredients in cookie recipes and this cookie came to mind. I wasn’t wrong. The combination of peaches and pecans in cookie form was fantastic.

You won’t walk home with a single one once word gets out about how tasty these cookies are!

Peach and Pecan Cookies are really easy and simple to make, too. They have only six ingredients!
Here’s what I did.
I used these ingredients.
Place softened butter in a mixing bowl. Add sugar and vanilla. Cream with an electric mixer until smooth.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add peeled, finely diced peaches and chopped pecans.
Stir ingredients with a wooden spoon to combine.
Roll mixture into balls and place on greased cookie sheets. Press mixture down with a fork dipped in sugar. I also sprinkled a little bit of sugar over top of each one.
Bake at 350 about 15-18 minutes or until done.
Every mouthful of these cookies is mouthwatering.

PEACH AND PECAN COOKIES
(Recipe adapted from Mimi Pownall’s Potato Chip Cookies, when we attended First Baptist Church of Indian Rocks, Largo, FL)
Peach and Pecan Cookies
Equipment
- 2 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 nut chopper if nuts are not previously chopped
- 1 spatula
Ingredients
- 1 cup unsalted butter softened
- 1/2 cup granulated sugar
- 1 tsp. vanilla extract
- 2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
- 1 cup peaches peeled and finely diced
- 1/2 cup pecans finely chopped (measure after chopping)
- 1/2 cup granulated sugar
Instructions
- Cream together butter, sugar, and vanilla.
- Add flour, peaches, and pecans and stir together with a wooden spoon until well mixed.
- Form into small balls.
- Place on greased cookie sheets (or spray with cooking spray).
- Press cookies flat with glass dipped in sugar or with fork dipped in sugar.
- Sprinkle a little more sugar over top of each cookie.
- Bake at 350° about 15-18 minutes or until lightly browned.

Hi Mary. These cookies really are terrific. If you want to try them with canned peaches, I recommend rinsing the peaches and patting dry really well before adding them to the recipe so they don’t add additional liquid. Enjoy.
