Strawberry White Chocolate Cookies

Are you ready for the e-a-s-i-e-s-t cookie to bake in the world? Strawberry White Chocolate Cookies have only four ingredients and they’re super easy to make. They start with a strawberry cake mix. Add a little oil, eggs and white chocolate chips and voila! You have the perfect cookie that’s also incredibly easy too.

The hardest part about this recipe is finding white chocolate chips. No kidding! White chocolate chips just aren’t carried in many stores in the Dallas Metroplex area. Kroger have their private selection and Trader Joe’s, and that’s about it. Everyone has premiere white baking chips or vanilla chips but they are definitely not the same. They have no cocoa in the chips. While they taste good, they’re not chocolate! 🙁

I’ve made several of these cake mix cookie recipes before. I have one suggestion. Don’t use as much oil as many recipes suggest. The original recipe called for half cup of oil. That will cause your cookies to run flat (unless you freeze them or refrigerate them first). I decreased that amount to one-third cup oil. That usually works perfectly with a 16.25-ounce package of cake mix. If the cake mix amounts are lower, then you have to make adjustments.

I made these delicious Strawberry White Chocolate Cookies for our annual Christmas Cookie Extravaganza this year. I thought they turned out terrific. While I started with a cookie scoop, after about one cookie sheet I switched over to rolling the cookie dough in my hands into balls. I thought that ended up being a lot easier.

I used these ingredients. I found the white chocolate chips at Kroger.

Pour cake mix into a mixing bowl. Add eggs and canola oil.

Stir with a wooden spoon to combine. The mixture should not be runny.

Add white chocolate chips.

Stir to combine.

I started with a cookie scoop, but actually found these easier to make by just rolling the dough into balls with my hands. Place cookie dough on cookie sheets that have been sprayed with cooking spray.

Bake 13-15 minutes or until done. I was baking four racks at a time so my cookies took a quite a bit longer to bake.

Allow cookies to cool before serving. I baked eight batches of these cookies for our Christmas Cookie Extravaganza.

  • 1 large mixing bowl
  • 1 wooden spoon
  • measuring cups
  • 1 spatula
  • 2 18x26" cookie sheet pans
  • 1 1/4 cup cookie scoop

Ingredients
  

  • 16.25 oz. box Pillsbury Strawberry cake mix
  • 1/4 to 1/3 cup canola oil or use coconut oil (melted) or avocado oil
  • 2 large eggs
  • 11.25 oz. pkg. white chocolate chips (not vanilla chips or premiere white baking chips)

Instructions
 

  • Combine cake mix and eggs.
  • Stir in just enough oil until batter is moistened.
  • Stir in white chocolate chips.
  • Spray cookie sheets with cooking spray.
  • Roll cookies into balls or scoop cookie dough with a scoop and place on prepared baking sheets.
  • Bake at 350° for 13-15 minutes or until done.
  • Rotate cookies on racks every six to eight minutes while baking.
  • Cool completely.

Notes

NOTE: Because I was baking four racks of cookies at once, my cookies took between 20-24 minutes to make. I also rotated the trays every eight minutes.
 
NOTE: These cookies must be rotated during baking or the white chocolate chips will brown on the top rack.
 
NOTE: I found these cookies did better by rolling the dough into balls than using a cookie scoop.
 
NOTE: Be sure to use true white chocolate chips. Most stores only carry white or vanilla chips. They are not the same. In the Dallas area the only two stores that carry white chocolate chips are Kroger and Trader Joe’s.
 
NOTE: My eggs seemed extra large or jumbo rather than regular sized large eggs. You have to adjust the oil accordingly. If your mixture is dry, add more oil. Otherwise, add just enough oil to mix the dough.
