Peach Caramel Blondies
Peach Caramel Blondies are such mouthwatering cookies you won’t want to stop eating them! They start with loads of fresh peaches and Ghirardelli caramel flavored chips. I put them in one of my favorite cookie dough recipes, and voila! They are perfection. Peaches and caramel are really wonderful together–like caramel apples except with peaches instead. On top of that, these are easier than cookies since you just press them into a cookie sheet instead of rolling into balls.

Back in June, I was contacted by Washington State Stone Fruit Growers Commission and asked to make recipes using their fruit. They would send fruit and I would make either food recipes or canning recipes and blog about it. They sent me a twenty-pound box of peaches in the middle of August. I’ve been busy making peach desserts ever since. I’ve come up with some absolutely spectacular recipes with all that prime fruit. I plan on sharing them with you over the next few weeks.
The peaches came in mint condition, and believe me, we’ve been enjoying them. The skin on these peaches was so wonderful I’ve been able to make several recipes without first peeling them. What a time savings. Plus, those skins add healthy nutrients. 🙂 I’ve inundated our neighbors, friends and folks at John’s office with all kinds of tasty treats over the past couple of weeks. We have already received all kinds of rave reviews over these recipes, so I hope you’ll give them a try. I can tell you from first hand experience I’ve drooled over every single one.
Peach Caramel Blondies are really are terrific cookies for any occasion. But they’re especially nice for summer and fall parties when fresh peaches are in season. These are also great for tailgating and potlucks. These blondies (cookies) are not overly difficult to make either. While I served some ala mode with caramel sauce over top, they are totally heavenly just plain. But be warned. These amazing cookies are so drool-worthy you won’t want to stop eating them.

These cookies are filled with fresh peaches and caramel chips.
Peach Caramel Blondies are rich, decadent and delectable!
Here’s what I did.
I used these ingredients.
Soften butter and place in a mixing bowl. Add granulated sugar, brown sugar, eggs, salt, baking soda and vanilla.
Mix with an electric mixer until smooth.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add Caramel Chips and fresh peaches.
Stir with a wooden spoon to combine.
Press mixture into a greased 13×17″ cookie sheet. (I had to keep my hands moist to do this).
Bake at 350 for about 40-50 minutes or until a toothpick inserted in center comes out clean. My oven took 55 minutes to bake these fully.
Serve ala mode with caramel sauce if desired.
Peach Caramel Blondies are great for tailgating parties and potlucks.

PEACH CARAMEL BLONDIES
(My own concoction)
Peach Caramel Blondies
Equipment
- 1 11x17" jelly roll pan
- 1 large mixing bowl
- 1 wooden spoon
- 1 electric mixer
- 1 spatula
- 1 sharp knife to pit, pare and dice peaches
- measuring cups
- measuring spoons
Ingredients
- 1 1/2 cups unsalted butter softened (3 sticks)
- 1 1/2 cups brown sugar firmly packed
- 3/4 cup granulated sugar
- 3 large eggs
- 2 tsp. vanilla extract
- 4 1/2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 1 1/2 tsp. baking soda
- 1 tsp. sea salt
- 12 oz. pkg. Ghirardelli caramel chips
- 2 1/2 cups fresh peaches pitted, peeled and finely diced
Instructions
- Preheat oven to 350°.
- Grease or spray a large 11x17” jelly roll pan with cooking spray.
- In large bowl, combine butter, sugars, vanilla, eggs, salt and baking soda.
- Beat at medium speed with an electric mixer until fluffy.
- Stir in flour, caramel chips and fresh peaches with wooden spoon until combined.
- Spread and press down cookie dough into prepared cookie sheet.
- Bake at 350 degrees for 40-50 minutes, or until lightly browned and a toothpick inserted in center comes out clean.

Made these with some fresh peaches I got from a Farmers Market. They turned out fabulous, even my husband and daughter thought so. I didn’t have caramel chips and I didn’t make the frosting for the top. Instead I used white chocolate chips and put caramel ice cream topping on top. Turned out so moist. Hi, Nancy. So glad you enjoyed the blondies. Caramel chips are hard to find sometimes. Kroger calls them salted caramel chips I think. Sometimes we can get a Hershey’s brand certain times of the year. I usually pick up a few packages whenever I see them, because most stores don’t carry them throughout the year. 🙁
