Sweet Potato Casserole with Coconut Praline Topping
I have a wonderful Sweet Potato Casserole recipe for you today. Just in time for Christmas! Sweet Potato Casserole with Coconut Praline Topping is absolutely heavenly. This decadent side dish is sweet enough to serve for dessert! It’s actually a really easy recipe, too, only using a handful of ingredients. This recipe uses canned yams, although you can bake your own if you desire. The topping consists of coconut, pecans and Corn Flakes! It’s crunchy and adds just the perfect touch to the casserole.

Back in April we had some neighbors up one street from us invite us over for dinner. Linda outdid herself with lots of delicious items on the menu. We loved that meal. She allowed me to borrow her home-published cookbook. I copied down recipe after recipe of things I wanted to try. This Sweet Potato Casserole was one of those recipes. I have plenty of Sweet Potato Casserole recipes but this one had an intriguing topping. Coconut, pecans and Corn Flakes! I couldn’t resist.
We hosted our weekly Friday night care group/Bible study for a Christmas dinner last Saturday. John picked up a spiral cut ham a few weeks ago on closeout. So I knew I was going to serve Apricot Glazed Ham. This is a staple at our house. We make it almost every year for the holidays. I served the ham, this lovely Sweet Potato Casserole with Coconut Praline Topping, a fantastic Cracked Out Green Bean Casserole and “That Good Salad.” The salad, Green Bean Casserole and Sweet Potato recipes are all recipes from my neighbor Linda. On top of that I also made my Black Forest Dream Dessert.
The food around our table that night was so mouthwatering. Everyone else brought at least two dishes so we had our choice of appetizers, main course and sides as well as desserts. It was hard to stop eating. 🙂 Believe me when I say everything was pretty drool-worthy.

I served Sweet Potato Casserole with Coconut Praline Topping with Apricot Glazed Ham and Cracked Out Green Bean Casserole. Yum.
This casserole bakes in about 30 minutes so it’s really quick and easy for the holidays.
Here’s what I did.
I used these ingredients.
Drain yams (or sweet potatoes) and place in a large mixing bowl.
Mash with an electric mixer until sweet potatoes are smooth.
Add evaporated milk, sugar, eggs and part of the butter (melted).
Mix again with an electric mixer until smooth.
Spoon sweet potato mixture into a greased 9×13″ glass baking dish. Bake at 400 degrees for 15 minutes.
Meanwhile, as casserole is baking, prepare topping: Melt remaining butter. Place pecans, coconut and crushed Corn Flakes in a mixing bowl. Stir in melted butter.
Stir topping ingredients to combine.
Remove casserole from oven.
Spread topping evenly over top of hot casserole.
Bake an additional 15 minutes at 400 degrees.
Serve!

SWEET POTATO CASSEROLE WITH COCONUT PRALINE TOPPING

Sweet Potato Casserole with Coconut Praline Topping
Equipment
- 1 9x13" glass baking dish
- 1 nut chopper if nuts are not previously chopped
- 1 large mixing bowl
- 1 wooden spoon
- 1 electric mixer
- 1 small mixing bowl
- 1 spatula to serve casserole
- 1 fork
- measuring cups
- measuring spoons
Ingredients
- 80 oz. can sweet potatoes or yams drained (two 40-ounce cans)
- 2 large eggs
- 1 1/4 cups granulated sugar
- 1/4 cup unsalted butter softened almost to the point of melting (1/2 stick)
- 6 oz. can evaporated milk (or half of a 12-oz. can)
- 1 cup crushed Corn Flakes cereal (measure after crushing the cereal)
- 1/2 cup coconut
- 1/2 cup pecans chopped
- 1/4 cup unsalted butter melted (1/2 stick)
Instructions
- Place drained yams into a large mixing bowl.
- Mash potatoes with electric mixer until smooth.
- Add granulated sugar, evaporated milk, eggs and ½ stick butter (softened and almost melted), and blend together.
- Pour into a greased 9x13” glass baking dish.
- Bake at 400 degrees for 15 minutes.
- Topping: mix crushed cornflakes, pecans, coconut and ½ stick melted butter together in a small mixing bowl with a fork.
- Sprinkle evenly over top of sweet potatoes (yams).
- Bake another 15 minutes at 400 degrees or until topping starts to brown.

Just as an FYI, for this recipe, in the instructions to print out, you left out for #3 the evaporated milk.

Hi, Lisa. It’s actually in there, but I referred to it as simply milk. I changed it to “evaporated” milk so there’s no confusion.
