Corny Bacon Casserole
This fun Corny Bacon Casserole is so scrumptious. It’s loaded with corn and bacon–two of my favorite foods. 🙂 It’s relatively easy to whip up. It’s a great side dish for holiday menus like Easter, Mother’s Day or Father’s Day.

Back in January, one of our church elder’s wives ended up in the hospital. It started with flu-type symptoms and ended up turning into severe pneumonia. She was hospitalized for over a week and out of work for three weeks when she was re-admitted to the hospital! This time the lining of the lungs was infected. The poor gal could not catch a break.
I took them a meal that included Spaghetti Pizza Bake, Olive Garden Salad Dressing Copycat Recipe, Parsley Herb Bread, Banana Blondies and this tasty dish. She texted me later that night to tell me how much they loved everything. She said she really liked the corn because “it had all that bacon on it!”
I was a little concerned with the texture of this casserole when I spread it into the baking dish. It has a texture unlike any casserole I’ve ever made before. But it actually cooked up great. The savory flavors are wonderful. If you need to make this recipe gluten free, you can easily swap out the all-purpose flour for GF flour, too.
Corny Bacon Casserole is one of those recipes you’re probably going to want on your regular menu plan. It literally will work with any kind of main dish. You can also use any kind of corn–fresh, frozen or canned. Give this recipe a try the next time you get the urge for a little corn with your bacon. 🙂
Corny Bacon Casserole is delightful!

Here’s what I did.
I used these ingredients.
Cut bacon into thin strips. Fry over medium heat until crisp.
Remove bacon to paper towel-lined plate to drain. Set aside.
Remove all but two tablespoons bacon grease. Add onions and fry until tender – a minute or two. Add garlic and saute for one minute longer.
Add flour, salt and pepper.
Stir to combine. Mixture will begin to bubble. Cook and stir one minute.
Remove skillet from heat. Add sour cream.
Stir until smooth.
Add corn, parsley and half of the bacon.
Stir well to combine.
Spray a small casserole dish with cooking spray. Spread corn mixture into prepared dish.
Sprinkle remaining half of the bacon on top.
Bake at 350 degrees for 20-25 minutes or until heated through. Garnish with fresh chives before serving.
I served Corny Bacon Casserole with Spaghetti Pizza Bake.

CORNY BACON CASSEROLE

Corny Bacon Casserole
Equipment
- 1 2 quart casserole dish (or an 8x10" baking dish)
- 1 skillet to fry bacon
- 1 sharp knife to cut vegetables
- 1 wooden spoon
- measuring cups
- measuring spoons
Ingredients
- 6 slices bacon diced, or sliced in thin strips
- 1 medium onion chopped
- 2 tbsp. all-purpose flour (I used unbleached flour)
- 2 cloves garlic minced
- 1/2 tsp. sea salt
- 1/2 tsp. ground black pepper
- 8 oz. sour cream
- 3 1/2 cups fresh or frozen whole kernel corn
- 1 tbsp. fresh parsley chopped
- 1 tbsp. fresh chives chopped, for garnish
Instructions
- In a large skillet, over medium heat, fry bacon until crisp.
- Be careful not to cook bacon too long or at too high a temperature so that it scorches!
- Remove bacon to paper towel-lined plate and drain well.
- Remove all but two tablespoons bacon grease in skillet.
- Add onion.
- Cook until tender approximately 2 minutes.
- Add garlic; stir and cook for one minute longer.
- Add flour, salt and pepper.
- Mixture will begin to bubble.
- Cook and stir for another minute.
- Remove skillet from heat.
- Stir in sour cream until smooth.
- Add corn, parsley and half of the bacon.
- Stir until well combined.
- Spoon ingredients into a greased 8x10” baking dish or a two-quart casserole dish.
- Sprinkle top with remaining bacon.
- Bake, uncovered, at 350º for 20-25 minutes or until heated through.
- Sprinkle casserole with fresh chives.
- Serve.
