
Scalloped Corn with Bacon
Oh my gosh guys, Scalloped Corn with Bacon is awesome. Seriously, this is one of the BEST Corn Casserole recipes I’ve ever eaten. Yes, bacon makes everything better! This casserole was so good that I made it about three times in the course of a week! It’s also pretty easy.

This delightful Corn Casserole is everything you want for the holidays! Parts of it can be made in advance if necessary. You can cook the bacon a few days in advance if that works for your schedule. Just break it into pieces and store in a zip lock bag in your refrigerator. Even still this side dish can be oven ready in about 10 minutes. While you cook the bacon you can get everything else ready to go. It’s basically a dump and go recipe.
I tried this recipe out in late August for our Friday night care group. I served it with Favorite Slow Cooker Pot Roast. There was not one crumb leftover. Everyone raved over the dish and kept going back for more. It was so good (and EASY). I decided to make it again for our college kids the following Sunday night. It was served with turkey an all the trimmings. Our college group couldn’t stop eating it–and we had a lot of food that night.
All I can say is Scalloped Corn with Bacon is a winner! I would give it 10 stars. Every bite is mouthwatering and delicious. If you want a fantastic holiday side dish for Thanksgiving or Christmas this year, this recipe is it!

Scalloped Corn With Bacon is a favorite in our house.

Every bite is irresistible.

I served Scalloped Corn with Bacon with my Favorite Slow Cooker Pot Roast.
Here’s what I did.

I used these ingredients.

Fry bacon until crisp in skillet over medium heat. (You can also bake in oven or microwave).

When bacon is cooked, remove to a paper towel-lined plate to drain. Set aside.

In a mixing bowl, add creamed corn, drained whole kernel corn and milk.

Stir ingredients to combine. Add egg.

Add bread crumbs, onions, bell pepper, salt and pepper.

Stir ingredients to combine.

Pour ingredients into a greased 8×12″ glass baking dish.

Sprinkle crumbled, cooked bacon over top of casserole.

Dot casserole with tiny slivers of butter.

Bake casserole at 350, uncovered, for 30 minutes.

Serve with your favorite meal, like Turkey or Favorite Slow Cooker Pot Roast.

We found every bite of Scalloped Corn with Bacon absolutely marvelous. The sumptuous, savory taste from the bacon made all the difference in the world!

This is a terrific side dish for company or holiday gatherings like Thanksgiving or Christmas.

Scalloped Corn with Bacon
Equipment
- 1 8x12" glass baking dish
- 1 large mixing bowl
- 1 wooden spoon
- 1 sharp knife to cut vegetables
- measuring cups
- measuring spoons
- 1 spatula
- 1 large skillet
Ingredients
- 15 oz. can whole kernel corn drained
- 15 oz. can creamed corn
- 3/4 cup 2% milk or half-and-half
- 1 large egg beaten
- 1 cup Italian Style bread crumbs
- 1 cup onions chopped
- 3 tbsp. green bell pepper chopped
- 1/2 tsp. Salt and pepper to taste
- 4 to 5 slices bacon crisply cooked and crumbled
- 2 tbsp. unsalted butter diced
Instructions
- Fry bacon in skillet until done but not scorched; drain on paper towel-lined plate.
- Set aside.
- Combine corn, creamed corn and milk or half-and-half in a large mixing bowl.
- Add egg.
- Add remaining ingredients except bacon and butter.
- Pour mixture into a greased 8x12” glass baking dish.

Looks wonderful and the shape is so interesting. I can imagine how good it tastes! That’s my kind of recipe! I go weak in the knees for anything these delicious recipe and this is one of my kind. 🙂

While this sounds good, I would swap the green peppers for red (green has an aftertaste, and upsets some stomachs), and add diced sweet onion, red pepper flakes, some minced chilies, and shredded cheddar cheese. Yum!

Hi, Mary Anne. All those additions sound heavenly. I usually substitute red pepper for green too. Even as is, it’s a terrific recipe!
