Cast Iron Peach Cobbler

Ok guys. One of my favorite Peach Cobbler recipes of the season. Cast Iron Peach Cobbler is wonderful. Instead of using cinnamon, this delightful cobbler uses almond extract and roasted, salted pecans for flavor and texture. The outcome was terrific. It was certainly one of those desserts I could have drooled over for quite some time.

This recipe uses nine ingredients–so it’s not overly difficult. If your mom or Grandma gave you a cast iron skillet in the past, here’s the time to yank it out! I personally love cooking with cast iron. It takes a bit of care, but once you learn how to cook with it, the skillets are wonderful. (I use enameled cast iron daily).

A few of Cast Iron tips: these skillets cook better on a medium heat rather than high. Heat the skillet before adding oil. Use plenty of oil so food doesn’t stick on the bottom. Wash and dry with a towel immediately. Don’t allow the skillet to drain dry. That’s the way rust forms. To re-season a skillet: Apply a thick coat of oil and place on an oven rack. (Place a cookie sheet on rack below to catch drips). Bake about 30-60 minutes at 350. Remove from oven and enjoy.

I received a large box of nectarines and peaches from the Washington State Fruit Commission back in August 2019. They asked me to blog about my experiences with their delicious fruit. I had so much fun making desserts with nectarines. I have never made anything with nectarines before. My Southern Nectarine Cobbler and Nectarine Pie turned out just awesome.

For the peaches, I made a Peach Pinwheel Cobbler, Peach Cobbler Amandine, Peach Crumble Pie and this Cast Iron Peach Cobbler. I sent the works out to John’s office along with about 8 other pies. They were demolished in short order! People still keep coming up to John and sharing how much they enjoyed the desserts. You’ll see why if you make one of these recipes!

Cast Iron Peach Cobbler is really pretty basic. The peach filling goes on the bottom. The topping is dolloped over top and then sprinkled with sugar before baking. This dessert is MADE for ice cream. 🙂 But whipped topping is a good substitute in a pinch.

This is a dynamite dessert to serve your family as peach season comes to a close. If you can’t find fresh peaches, canned peaches will work just as well. Don’t deprive yourself of a bite of this amazing Cast Iron Peach Cobbler. Get to the store today and make it up. 🙂 Add a scoop of ice cream and enjoy.

  • 1 cast iron skillet or other ovenproof skillet
  • 1 nut chopper if nuts are not previously chopped
  • 1 sharp knife to peel, pit and slice peaches
  • 1 microwaveable bowl
  • 1 microwave oven
  • 2 mixing bowls
  • 1 spatula
  • 2 wooden spoons
  • measuring cups
  • measuring spoons

Ingredients
  

  • 4 cups peaches peeled, sliced (about 5 medium peaches)
  • 1 cup granulated sugar
  • 1 tsp. almond extract
  • 1/3 cup unsalted butter (melted)
  • 1 cup UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 2 tsp. baking powder
  • 1/4 tsp. sea salt
  • 1/2 cup half-and-half
  • 1/2 cup granulated sugar
  • 1/3 cup pecans roasted, salted (or more, if desired)
  • 1 tbsp. granulated sugar or more, if desired

Instructions
 

  • Combine peaches, 1 cup granulated sugar and almond extract in a mixing bowl.
  • Pour butter into prepared 10-inch cast iron skillet.
  • Add peach mixture to skillet.
  • Combine flour, baking powder, salt and ½ cup granulated sugar in a mixing bowl.
  • Add half-and-half and stir to combine.
  • Dollop topping mixture over top of peaches in skillet.
  • Sprinkle 1 tablespoon granulated sugar over top of the topping ingredients.
  • Sprinkle roasted pecans over top.
  • Bake at 350 degrees for about 55-60 minutes or until topping is lightly browned and cooked through.

    THIS IS NOT COBBLER, it is fruit pie filling and dumplings. Cobbler is a thin batter INDIVIDUAL pieces of fruit are placed on top, that rises up around the fruit to make delicious goodness. Do you call a ford mustang a truck because they have wheels in common? The dumbing down of Americans continues…
