How about this everyone, Banana Bread in oatmeal form. Yes, yes, yes! I loved this tasty and delicious Banana Bread Overnight Oatmeal recipe. I started with steel-cut oats, also called pin oats or Irish oats. When slow cooked in the crockpot, they turn out very soft and creamy. I’ve tried cooking them on the stove before but they turned out tough and chewy. Ugh. But cooked overnight in the crockpot, the oats turn out wonderfully.
Back in June we traveled to Pennsylvania to see my kids and grandkids. We also visited with my daughter-in-law’s parents. We got talking about making oatmeal to reduce cholesterol. My daughter-in-law loves making hers with bananas, but her mother liked adding nuts and dates to the batch as well. So that’s what I did. I made this amazing oatmeal with bananas, walnuts, dates and cinnamon. It was very well flavored and additional sugar was not necessary. So this recipe is sugar free as well as gluten free and vegan.
The one thing you’ll need is a programmable crockpot. This recipe is done in 5 hours on low, and that was using my slowest crockpot. Be careful not to overcook this recipe or the oats will stick to the sides of the crockpot and dry out. You can also make it during the day and then pack the oatmeal up in containers for the refrigerator or freezer, depending on your need and preference. I’ve done both.
While you can top each serving with additional bananas and walnuts (like I did in the pictures), you really don’t need any more. And, truthfully, I really don’t think you need to add brown sugar or maple syrup, since it really is pretty sweet already especially if you use ripe bananas.
Banana Bread Overnight Oatmeal is a fantastic breakfast option for company and holiday breakfasts. It’s so easy to toss everything in the crockpot and wake up to a batch of scrumptious smelling oatmeal in the morning. Plus, this recipe makes 12 servings so it’s terrific for serving a crowd. This healthy breakfast recipe is vegan, gluten free and sugar free!
Here’s what I did.
I used these ingredients, plus water.
Pour bag of steel-cut oats into a mixing bowl.
Add dates, walnuts, cinnamon, sea salt and vanilla.
Stir ingredients to combine.
Add sliced bananas and oat milk. I get the Oat Milk at Walmart, but you have to get it early in the day before they sell out!
Add water.
Stir to combine. Spray a large crockpot with cooking spray. Pour oatmeal ingredients into crockpot and stir to evenly distribute ingredients.
Cook on low heat for 5 hours. Stir once or twice during cooking time.
Top each serving with fresh bananas and walnuts if desired.
Slow cooking the oats makes them so creamy.

Banana Bread Overnight Oatmeal makes for a terrific company or holiday breakfast. This recipe features steel-cut oats slow cooked overnight so they're creamy and delicious. The ingredients from Banana Bread amp up the flavor by adding bananas, cinnamon, walnuts and dates. Making a batch of this delightful oatmeal is a great way to wake up in the mornings. This recipe is vegan, gluten free and sugar free along with being healthy and an excellent way to watch your cholesterol.
1/2cupwalnutschopped, for garnish if desired (measure after chopping)
Instructions
Spray a large 6 or 7-quart crockpot very generously with cooking spray.
Combine first nine ingredients and spread into crock pot.
Cook on low overnight for approximately 5 hours; stir once or twice during cooking time.
Serve garnished with fresh sliced bananas and a sprinkle of chopped walnuts, if desired.
Notes
NOTE: You can portion out the servings into microwavable glass or plastic containers. Refrigerate for up to one week and microwave before serving.NOTE: You can also freeze the cooked oatmeal in the same type of containers. Remove from freezer and allow to defrost in refrigerator a day or so before using and microwaving as noted above.NOTE: This recipe has no added sugar.
