Baked Italian Parmesan Chicken

I really enjoy baked chicken recipes. They’re so easy to toss together and make life so much easier when preparing dinner. Baked Italian Parmesan Chicken is one of those super easy recipes. It uses only three ingredients. That’s right, 3! Besides the chicken, it uses grated parmesan cheese and about half a bottle of Hendrickson’s Sweet Vinegar and Olive Oil Dressing. I purchase it at Brookshire’s in the Dallas Metroplex area, but just about any Italian dressing will do.

I like the Hendrickson’s because it’s made with more wholesome ingredients and doesn’t use the bad oils of most salad dressings. I had several jars of it after moving and decided it was time to clear out my pantry a little and use some with this recipe.
I marinated the chicken in the salad dressing, then sprinkled it with Parmesan cheese before baking. Because Hendrickson’s is a little on the sweet side, you’ll have to use plenty of Parmesan Cheese to counter some of the sweetness. That’s easily done by sprinkling the cheese over top of the chicken while baking. Then turn the chicken half way through cooking time and generously sprinkle that side with more cheese. If you can’t find Hendrickson’s, a zesty, flavorful Italian dressing is your best option.
Because I was baking the chicken in the oven, it was simple enough to toss some veggies into a casserole dish and squirt them with a little olive oil and sprinkle with herbs. That way dinner was all done about the same time. It was healthy, hearty, gluten free and quite satisfying.
Baked Italian Parmesan Chicken is an easy dinner entree for weeknight dinners even if you don’t have time to marinate the chicken. And the taste? Superb. 🙂
Baked Italian Parmesan Chicken is a delightful 3-ingredient recipe!
I served it with roasted potatoes and carrots. Everything was quite delicious.
Baked Italian Parmesan Chicken is healthy and gluten free, along with being so easy to toss together.
Here’s what I did.
I used these ingredients. If you can’t find Hendrickson’s Sweet Vinegar and Olive Oil salad dressing, use a good Italian dressing.
Place boneless chicken breasts into a large zip lock back. Add about a half bottle of the salad dressing. Zip the top and shake slightly to get the dressing to cover all of the chicken. Refrigerate and marinate 30 minutes to a couple of hours.
Place chicken pieces into a greased 10×15″ glass baking dish. Pour marinade over top.
Sprinkle generously with parmesan cheese.
Bake chicken at 350 degrees for about a half hour. Turn chicken pieces over, sprinkle with more parmesan cheese and continue baking another 30-45 minutes or until chicken tests done.
If desired, transfer the chicken pieces to a serving dish.
Baked Italian Parmesan Chicken is very easy to prepare. It also cuts down nicely to add on top of salads for lunch!
I like serving baked chicken dishes with veggies I bake in the oven. It’s so much easier cooking all of the meal together.

BAKED ITALIAN PARMESAN CHICKEN
(My own concoction)
Baked Italian Parmesan Chicken
Equipment
- 1 jumbo zip lock bag WITHOUT the "stand and fill" bottom (a gallon size bag may also work)
- 1 10x15" glass baking dish
- 1 large mixing bowl
- measuring cups
- 1 spatula
Ingredients
- 6 chicken breasts boneless, skinless
- 16 oz. bottle Hendrickson's Sweet Vinegar and Olive Oil dressing (I used about 8 ounces)
- 1/2 cup Parmesan cheese or more, if desired
Instructions
- Place chicken breasts in a jumbo zip-lock bag.
- Add salad dressing.
- Close zipper and swish ingredients.
- Place in bowl or dish in refrigerator and marinate at least one hour.
- Remove from refrigerator.
- Spray a 10x15” glass baking dish with olive oil cooking spray.
- Shake off any marinade residue from the chicken and place chicken breasts into baking dish.
- Pour remainder of marinade around the chicken in dish but not over top of it.
- Sprinkle Parmesan cheese generously over top of the chicken.
- Bake at 350° for about 30 minutes.
- Turn chicken pieces over and sprinkle with additional Parmesan cheese.
- Continue baking an additional 30 minutes or until chicken tests done.

This healthy dinner menu was hearty, satisfying and very filling. Yet, it was so easy to prepare.

Chicken parm is one of my favorite dishes and it’s always good to have a delicious low carb option. This baked Italian parm chicken recipe is like the real thing – tasty, flavorful and very satisfying.

With the rise of the foodie culture, it’s no surprise that we’re seeing more and more recipes focusing on ingredients like Parmesan cheese. And while it’s true that Parmesan is a popular ingredient in many cuisines, it’s also believed to have health benefits including reducing blood pressure, increasing bone density and maintaining healthy cholesterol levels.
