Christmas Cookie Extravaganza – 2021
These Oatmeal Cookies rock! Candied Pineapple White Chocolate Cookies include bits of candied pineapple along with real white chocolate chips (NOT vanilla chips or premiere white baking chips). The flavor is delightful and the cookies are soft and chewy in texture rather than hard, crunchy or crisp. I found them so delectable I didn’t want to stop eating them. 🙁

Paradise Fruit Company sent me a large box of all kinds of assorted candied fruit. I tried to make a different recipe with every different kind of fruit. Some kinds I made multiple recipes because there was a lot of fruit! I used the Candied Pineapple up in this recipe and a cake called Christmas Cream Cheese Pound Cake. Both recipes turned out fantastic and were well loved by those I sent them off to. We sampled a little bit but, after all, we couldn’t eat everything we made or we’d both way over 500 pounds. 🙂
Candied Pineapple White Chocolate Cookies are marvelous for holiday baking, tailgating parties or Christmas Cookie Exchanges. You can certainly serve these cookies for Thanksgiving or Christmas Dinner or even New Year’s Eve gatherings too. If you enjoy eating cookies as much as I do, none of these cookies will go to waste. Every one will be gobbled up before you blink your eyes!

Real white chocolate chips add delightful flavor too.
Candied Pineapple White Chocolate Cookies are one of the best Oatmeal Cookies you’ll ever eat!
Here’s what I did.
I used these ingredients.
Soften butter. Add sugar, brown sugar, eggs, vanilla, baking soda, baking powder and salt.
Mix with an electric mixer until smooth.
This is whaat the candied pineapple looks like.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add oatmeal, real white chocolate chips (NOT vanilla chips) and candied pineapple.
Stir with a heavy spoon to combine.
Roll cookie dough into balls and place on greased cookie sheets.
Bake at 350 degrees for 12-15 minutes or until done. Rotate cookie sheets on racks every six to seven minutes of baking time.
This recipe makes 5 1/2 dozen cookies, so you have plenty to share with friends and neighbors.
These Oatmeal Cookies are just delightful. Adding white chocolate chips and candied pineapple is a match made in heaven!

CANDIED PINEAPPLE WHITE CHOCOLATE COOKIES
(My own concoction)
Candied Pineapple White Chocolate Cookies
Equipment
- 3 18x26" cookie sheet pans
- 1 medium mixing bowl
- 1 wooden spoon
- 1 electric mixer
- measuring cups
- measuring spoons
- 1 spatula
Ingredients
- 1 cup unsalted butter softened
- 1 cup granulated sugar
- 1 cup light brown sugar packed
- 2 large eggs
- 2 tsp. real vanilla extract no substitutions
- 3 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. sea salt
- 1 1/2 cups oatmeal (I use old-fashioned)
- 2 cups white chocolate chips (NOT vanilla chips or premiere white baking chips)
- 16 oz. container Paradise candied tropical fruit pieces
Instructions
- In a medium bowl, cream butter and sugars with an electric mixer until smooth.
- Stir in eggs and vanilla, then flour, baking powder, baking soda and salt.
- Mix well; stir in oats, white chocolate chips and tropical pineapple pieces until thoroughly combined; this may take 4-5 minutes.
- Roll into balls and drop onto lightly sprayed cookie sheet.
- Bake at 350° for 12-15 minutes or until done.
- Rotate cookie sheets on oven racks after about 7 minutes of baking time.
- Cool completely

The candied pineapple cookies look delicious, and I can’t wait to try them, but the bloody band-aid covered finger in the photo is NOT appetizing in the least!
