Mixed Berry Overnight Oatmeal is a delight. This delicious overnight oatmeal recipe includes strawberries, blueberries, raspberries and honey-roasted pecans. The flavor is heavenly. This is a terrific recipe if you have a programmable timer on your slow cooker because you can set it and leave it be until breakfast time. It only takes about 5 hours on a low setting and it’s ready!

We love steel-cut oats. Add some fruit, flavoring and nuts and it becomes the perfect breakfast entree. John eats it all the time since it’s really helpful for his cholesterol. I usually make up big batches weekly and then pack the oatmeal down in individual containers. Then John pulls one out every morning for breakfast and reheats it in the microwave. Very simple. Very easy. Plus, since all the ingredients are tossed into the slow cooker, it’s easy on that end too.
I made this lovely oatmeal for a brunch I hosted a couple of months ago. Several ladies in our church get together weekly to pray for our schools and our grandchildren in those schools. It was my turn to host so I whipped up some of this oatmeal along with some Raspberry Sweet Rolls. Everyone else brought stuff too so we had enough food for 40 people!
Mixed Berry Overnight Oatmeal was enjoyed by all. You can add brown sugar or maple syrup to individual servings, if you desire. John prefers to add sugar in smaller amounts, so I usually don’t add any when cooking overnight oatmeal. This batch had honey-roasted pecans so there was already sweetness from that. If you want to add brown sugar while the oats are cooking, you’ll need about 3/4 cup (packed).
This is a healthy, vegan and gluten free breakfast entree that’s wonderful to make up for weekend, company or holiday breakfasts. But as I stated earlier, it’s great to pack down into individual containers and take out daily as you desire. You’ll get a dose of fresh fruit and honey-roasted pecans in every bite of oatmeal. Yum.

Here’s what I did.

I used these ingredients.

Pour steel-cut oats into a mixing bowl.

Add oat milk.

Add water.

Add diced strawberries, blueberries, raspberries, honey-glazed pecans, salt and vanilla. Stir ingredients to combine.

Spray a slow cooker with cooking spray. Add oatmeal mixture. Put on low setting and cook for about 5 hours, until done. Sometimes the recipe is ready in 4 1/2 hours.

Toss some additional strawberries, blueberries and raspberries on top to serve, if desired.

Sprinkle individual servings of Mixed Berry Overnight Oatmeal with extra strawberries, raspberries and blueberries, if desired.

This fruity oatmeal is hearty and satisfying.

I like to pack the oatmeal into individual containers and refrigerate it or freeze it. Then we just pull them out when we’re ready to eat and toss them in the microwave.

MIXED BERRY OVERNIGHT OATMEAL
(My own concoction)

- 24 oz. pkg. steel-cut oats (I used Bob’s Red Mill known as pinhead oats or Irish oats)
- 48 oz. container Califia Farms oat milk or almond milk
- 3 cups water (plus some water to rinse out the oat milk container)
- 1 tsp. sea salt
- 1 tbsp. real vanilla extract
- 1 1/2 cups honey roasted pecans
- 1 cup blueberries washed
- 1 cup raspberries washed
- 2 cups strawberries washed and diced
- brown sugar or maple syrup to serve, if you want additional sweetness

- Spray a large 6 or 7-quart crockpot very generously with cooking spray.
- Combine first nine ingredients and spread into crock pot.
- Cook on low overnight for approximately 5 hours.
- Serve garnished with fresh raspberries, blueberries, strawberries and roasted pecans, if desired.
NOTE: You can portion out the servings into microwavable glass or plastic containers. Refrigerate for up to one week and microwave before serving.
NOTE: You can also freeze the cooked oatmeal in the same type of containers. Remove from freezer and allow to defrost in refrigerator a day or so before using and microwaving as noted above.
NOTE: You can sprinkle the tops of each serving with brown sugar or pour maple syrup over top if desired. But you may find the recipe is sweet enough without additional sugar.
NOTE: Overnight oatmeal is something of a misnomer. This recipe was done in about 5 hours in my slowest crockpot.
NOTE: The key to this recipe is not overcooking the oatmeal so it sticks onto the sides of the crockpot. Five hours is really all you need.
NOTE: This recipe is easiest if you have a slow cooker with a programmable timer. Set the end time for when you want to serve breakfast.
NOTE: If you prefer a pre-sweetened oatmeal, add ¾ cup packed brown sugar with the other ingredients when cooking.

I’ve had this recipe cook in as little as 4 1/2 hours before. “Overnight” oatmeal is something of a misnomer. My slowest crockpot cooks this much faster than overnight. If you have a slow cooker with a programmable timer, that’s the best way to make this unless you want to cook it during the daytime.

Mixed Berry Overnight Oatmeal is really delectable. If you want it sweeter, just drizzle a little maple syrup over top before serving.
