
Pineapple Casserole
Okay, can I go on record and state that this Pineapple Casserole is probably one of my most favorite side dishes ever? Truly, this amazing casserole is awesome. It’s southern-style food to its core. The combination of pineapple, sharp cheddar cheese and Ritz cracker crumbs absolutely rocks. Yes, I love this casserole and devour large portions of it whenever I serve it!

From the first time I sunk my teeth into this mouthwatering casserole decades ago, I’ve loved Pineapple Casserole. Our church cook used to serve this for Wednesday night suppers especially when she made it with ham. Oh my!
When we were hosting a Friday night Bible study from a former church, one of the gals used to bring this scrumptious dish. I asked her to make it often. It’s not only wonderful served with ham, it’s great with any kind of main dish. Finally, I asked for the recipe. She texted it to me with very little instructions, but thankfully, I was able to decipher and figure out how to put it together.
I’ve made Pineapple Casserole several times for company. I ask them to try at least one bite. Without exception, everyone loves this amazing side dish. No lie! The first time I made it, I had several couples over and one who was a diabetic. I told him everything else I made that night he could eat, but NOT the Pineapple Casserole! I served it with Grilled Chicken, my famous Deviled Eggs, Bacon-Tomato Salad, Garlic Smashed Cauliflower and Spicy Creamed Corn.
The second time I made it for another group of company. Many went back for seconds. I served it with a Pot Roast Dinner and Baked Tomatoes Romano. Everyone else brought other sides. But everyone was amazed at the way the flavors blended. I can’t explain it but the combination is so incredibly mouthwatering, I could eat a dinner of just Pineapple Casserole!
I even had some left over to give to neighbors across the street when they moved in around the same time. They loved it along with all the other goodies I send at the time. Seriously, this deep-south side dish is so spectacular that I recommend it for any kind of family gathering or company dinner. I usually dare people to try it without telling them what it is. Once they have a bite, they’re truly hooked! No kidding.
Try Pineapple Casserole for your next special occasion dinner, like birthdays or anniversaries, Mother’s Day or Father’s Day (long past, I know). But certainly put it on your menu for Thanksgiving and Christmas this year. This side dish uses only 6 ingredients. It’s soooooo easy to whip up and it’s absolutely perfect for family gatherings. And everyone will be so glad you served it. Trust me. It’s delicious.

Pineapple Casserole is so scrumptious, I could eat the whole thing for dinner!

The savory and sweet flavor combination is an astronomical delight!

We love this deep-south dish.
Here’s what I did.

I used these ingredients.

Place two cans of chunk pineapple in a mixing bowl. Don’t drain ANY of the pineapple. Use all of it plus all of the juice. Some cans have more juice than others, but use it all!

Add sugar, flour and sharp cheddar cheese.

Stir ingredients to combine. If yours has a little more juice, don’t worry about it. The flour thickens it up while baking.

Spread mixture into a greased 9×9″ glass baking dish.

Melt butter.

Add crushed Ritz Cracker crumbs and stir well to combine. I usually just crush the crackers in my hands and add to the butter.

Sprinkle the Ritz cracker crumbs evenly over top of the casserole.

Bake at 350 degrees for about 30 minutes until the top is golden brown and mixture is hot and bubbly.

Every spoonful will rock your world. No kidding!

PINEAPPLE CASSEROLE

Pineapple Casserole
Equipment
- 1 9x9" glass baking dish
- 1 mixing bowl
- measuring cups
- measuring spoons
- 1 Rolling Pin to crush crackers (or just crush them in your hands)
- 1 wooden spoon
- 1 small bowl
- 1 fork
Ingredients
FILLING:
- 40 oz. can pineapple chunks undrained (two 20 ounce cans)
- 10 tbsp. flour
- 1/2 cup granulated sugar
- 12 oz. pkg. sharp cheddar cheese shredded
TOPPING:
- 3/4 cup real salted butter melted (1 1/2 sticks)
- 2 sleeves Ritz crackers crumbled (see note below)
Instructions
FILLING:
- Combine pineapple, flour, cheddar cheese and granulated sugar in a mixing bowl.
- Spread into a greased 9x9” glass casserole dish.
TOPPING:
- Combine topping ingredients and sprinkle evenly over top of casserole.
- Bake at 350° for about 30 minutes or until topping is golden brown.

Pineapple Casserole is absolutely breathtaking served with ham dishes, but it’s also wonderful with just about any other main dish entree. It was wonderful with Grilled Chicken and Bacon-Tomato Salad.
