Fried Cauliflower with Bacon

Wow! Fried Cauliflower with Bacon is amazing. No kidding. This delicious recipe is modeled after my Fried Green Beans recipe and it is exceptionally good. Plus it uses only 4 ingredients, unless you decide to add salt and pepper. So it’s easy, easy, easy! I used a thick-sliced bacon, onion, cauliflower and Tony’s Creole Seasoning. Truly, this is a magnificent side dish, especially if you enjoy cauliflower.

Our church had its annual church-wide picnic on May 1st. The church provided BBQ turkey, brisket and sausage along with rolls, pickles, onions and sauce. Everyone else was asked to bring sides and desserts. Many of you may know how hot it is here in Texas in the summer. We’re on track to have one of our hottest summers ever with lots of 100+ degree days. So our church asked everyone to bring hot side dishes or salads without mayonnaise (to prevent spoilage).
I decided to bring Fried Green Beans and this Fried Cauliflower with Bacon. Both recipes were gobbled up in no time. John and I served meat during the entire two hours it took to get everyone through the food lines. Granted, there wasn’t much food left that day. There was still meat and rolls and some store-bought cookies, but not much else. I knew it wouldn’t really matter how hot it was outside, the two side dishes I brought would be fine.
One of the things that makes this recipe amazing is the Creole seasoning. You can use as much as you desire, but for this amount a half teaspoon (3/8) is about all I usually use. Some who really enjoy creole flavors like much, much more. The Creole Seasoning flavors everything wonderfully without taking over the side dish so much that it overwhelms it. Add some salt and pepper if you wish, but remember the bacon is salted and the creole seasoning adds a little heat so you may not want any additional pepper either.
Fried Cauliflower with Bacon is a delightful side dish if you’re trying to use up garden produce. It’s also a tasty way to get your kids to eat their vegetables. On top of that, if you have company coming for dinner and you need a quick and easy side to prepare this one will WOW everyone. If you enjoy cauliflower, you may find this scrumptious side dish is just about perfect. 🙂

This is a great way to get your kids to eat cauliflower!
Here’s what I did.
I used these ingredients. You can use salt and pepper, if you desire, but it’s not totally necessary.
Stack the bacon, then cut it in one-inch pieces.
Fry bacon in a large non-stick skillet, turning occasionally until done (but not burned!)
Remove bacon to a paper towel-lined plate and set aside.
Meanwhile, fry onion in bacon grease until tender – a few minutes or so.
Wash cauliflower and break it up into florets.
Add cauliflower to skillet with bacon grease and cooked onion. Cover with lid and cook, stirring occasionally, until cauliflower is tender. Don’t add water, just set the lid on the pot at an angle where the liquid from the steam drips down into the skillet.
Season with Tony’s Creole Seasoning and salt and pepper, if desired.
Add bacon pieces.
Stir to combine and heat through a minute or two until cauliflower is tender and just starting to brown.
Serve with your favorite entree.
If you have a garden with cauliflower, this is a way to use it without using the same recipe every time.

FRIED CAULIFLOWER WITH BACON
(My own concoction)
Fried Cauliflower with Bacon
Equipment
- 1 large skillet
- 1 spatula
- measuring cups
- measuring spoons
- 1 sharp knife to cut vegetables
Ingredients
- 2 large heads cauliflower washed and cut up in florets
- 7 slices thick-cut bacon cut in one-inch pieces and fried crisp (this was 1/2 lb. bacon)
- 1/2 medium onion chopped fine
- 1/2 tsp. Salt and pepper to taste
- 1 tsp. Tony's Creole Seasoning or to taste (see note below)
Instructions
- Fry bacon in a non-stick skillet over medium heat until crisp; remove to paper towel-lined plate and set aside.
- Be careful to avoid frying at too high a temperature or too long so that the bacon scorches!
- After frying the bacon strips in a non-stick skillet, put the cauliflower florets and onion in the bacon drippings and fry slowly.
- Do not add liquid.
- Just set the lid on the pot at an angle where the liquid from the steam drips down into the skillet.
- Add seasonings.
- When cauliflower is almost tender, add bacon back into the skillet.
- Remove from heat when cauliflower florets are tender and just starting to brown.
