
Blackberry Sweet Rolls
Blackberry Sweet Rolls are an outstanding way to enjoy a weekend, company or holiday breakfast. These luscious sweet rolls are filled with blackberries and have a sweet, buttercream frosting glazed over top. Every bite will rock your world! No kidding. On top of that, these sweet rolls don’t knead mixing or kneading since that’s done in the breadmaker! It makes everything so, so easy.

My son and daughter-in-law had a baby in April. I took several meals to them including a meal the day her parents flew in to see them. I also included a batch of these scrumptious sweet rolls since my daughter-in-law enjoys blackberries. They all loved these jewels.
The rolls are light, fluffy even airy in texture. The blackberries pop in flavor. And, the icing is just spectacular. The combination is breathtaking to say the least! I love homemade Cinnamon Rolls or Sweet Rolls made with any kind of fruit. It doesn’t matter what kind of fruit, I like it all! (Actively drooling).
As you probably know, I’ve made several kinds of Cinnamon Rolls and Sweet Rolls for this blog. Those include Raspberry, Strawberry, Apple, Raisin, Cherry, Chocolate Chip, Green Cherry, and Blueberry. All of them are fantastic and such a treat for your family.
I’m always up for sweet rolls or cinnamon rolls. My mom used to make them for us a couple of times a week when we were growing up. Whenever she baked homemade bread (once or twice a week, 10 to 20 loaves at a time for our big family), she always made cinnamon rolls too. Yum. We gorged on them until they were gone–long before the bread was gone.
I think I was in my teenage years before I ever tasted store-bought bread. Nothing could beat Mom’s homemade bread. I made it a lot when my children were small. I made homemade bread exclusively for two years when we lived in Massachusetts in the early 90s. I made a Honey Whole Wheat version, but no other bread touched our lips during that time!
I can’t recommend Blackberry Sweet Rolls enough – especially if you have a breadmaker! The breadmaker does most of the work and these are just so amazingly mouthwatering. Try them for holidays like Thanksgiving or Christmas. You can even make them a day ahead if you don’t want to get up really early to make them on the same day. But be prepared for a stampede from your family! These amazing sweet rolls will be gobbled up before you blink your eyes!

I made two pans of these sweet rolls. One had 12 sweet rolls and this one had seven.

Blackberry Sweet Rolls are such a treat for a family breakfast.
Here’s what I did.

I used these ingredients for the dough. I usually freeze flour as it stays a lot fresher and longer that way.

If your butter is cold, sliver it and drop it into the bread canister. If not, you can put softened butter in the bread canister in a clump.

Add warmed half-and-half. I usually warm it in the microwave about 1 minute 45 seconds.

Add bread flour and sugar.

Add salt and yeast.

Set breadmaker to the “dough” setting. This will take approximately 1 hour 45 minutes.

I used these ingredients for the filling.

Roll the dough out onto a clean surface. You won’t need any flour.

Spread softened butter over top.

Spread brown sugar over top. I use the palm and outside edge of my hand to spread the brown sugar so it fills in every crevice.

Sprinkle evenly with washed blackberries.

Roll up tightly but gently.

Roll up all the way. Then cut the dough into even one-to-two-inch slices.

Place the sweet rolls into a greased baking dish. Shortening actually works better than butter for greasing the dish as it has a higher heat threshold. But oil will also work.
Place sweet rolls in a cold oven. Turn heat on for exactly one minute. Turn off oven. Allow rolls to rise about 20 minutes. Repeat the process and heat oven for exactly on minute. Then turn off oven again. Continue repeating the process every 20 minutes until the rolls have doubled in bulk and risen to fill almost the top of the dish. This will take about 1 hour 30 minutes to 2 hours.

Bake sweet rolls at 350 degrees for about 15-17 minutes, until the center is no longer gooey.

I used these ingredients for the icing.

Make up the icing while rolls are baking. Place softened butter in a mixing bowl. Add a dash of salt, powdered sugar and vanilla.

Add heavy cream or half-and-half.

Mix with an electric mixer until smooth. The icing will be thick.

Spread the icing over top of the pan of rolls as soon as they come out of the oven. The heat from the sweet rolls will gently melt the icing a little bit so it spreads and fills in all the crevices.

This is the smaller dish.

Now it’s time to take a bite!

Blackberry Sweet Rolls are perfect for a holiday breakfast like Thanksgiving or Christmas.

BLACKBERRY SWEET ROLLS
(My own concoction)

Blackberry Sweet Rolls
Equipment
- 1 9x13" glass baking dish
- 1 7x11" or 8x8" glass baking dish
- 1 breadmaker
- 1 Rolling Pin
- 1 spatula
- 1 sharp knife to cut roll dough
- measuring cups
- measuring spoons
- 1 electric mixer
- 1 large mixing bowl
- 1 rubber spatula to (gob) spread icing over hot rolls
Ingredients
DOUGH:
- 1/4 cup salted butter (1/2 stick)
- 1 1/2 cups half-and-half warmed (see note below)
- 4 cups bread flour
- 1/4 cup granulated sugar
- 1 1/2 tsp. sea salt
- 2 tsp. active dry yeast or bread machine yeast
BLACKBERRY FILLING:
- 1/4 cup salted butter softened (1/2 stick)
- 1 cup light brown sugar packed
- 12 oz. fresh blackberries washed and patted dry with paper towels
BUTTERCREAM ICING:
- 6 tbsp. salted butter softened
- 1 tsp. real vanilla extract no substitutions
- dash sea salt
- 5 tbsp. half-and-half or heavy cream
- 3 cups powdered sugar or as desired
Instructions
DOUGH:
- Layer ingredients in bread canister in order given.
- Slice butter and place in bread canister. (or if the butter is softened, put it whole in the canister).
- Warm milk in the microwave one to two minutes until milk is warmed.
- Pour into bread canister.
- Then add bread flour, granulated sugar, salt and yeast.
- Place on dough setting of bread maker.
- This will take approximately 1 ½ to 1 ¾ hours.
- Remove dough from bread canister and roll out into a very large rectangle (do not use flour on surface).
BLACKBERRY FILLING:
- Soften butter.
- Spread butter with a knife over top of rolled out dough to the edges.
- Sprinkle brown sugar over top.
- Even out brown sugar by spreading with your hand filling in all the spaces.
- Sprinkle blackberries over top.
- Roll up tightly jelly-roll style.
- Cut into even one to two-inch sections with a sharp knife.
- Place cut side up in well-greased rectangular baking dishes.
- Allow to rise in a warm place about an hour and 30 minutes to 2 hours (see note below).
- Bake at 350° approximately 15 to 17 minutes or until rolls test done and are no longer gooey in the center.
- Add icing over hot rolls and serve.
BUTTERCREAM ICING:
- Place ingredients in a mixer and beat for several minutes.
- Spread over top of hot sweet rolls with a knife or rubber spatula.
