Cheesy Squash Casserole
Cheesy Squash Casserole is fantastic. This scrumptious side dish is fairly easy to prepare and so delightful to the taste buds. I cooked up both zucchini and yellow squash. I added celery, onion, sour cream and cheddar cheese. Then it’s topped off with a Ritz cracker topping that includes more cheddar cheese. Absolutely mouthwatering.

Back in early May we had two couples over for dinner one night. I served my Mom’s wonderful Texas BBQ ribs, Garlic Mashed Potatoes, and this wonderful recipe. Our friends brought a salad and, by request, Peanut Butter Brownies. All the food was fantastic, but everyone kept going back for extra servings of this Cheesy Squash Casserole! No kidding. The dish was about cleaned out by the time we were done. It really has wonderful flavor.
About 15 years ago we drove to western Virginia for a wedding for a couple in our Sunday school class at the time. On our way home, our pastor and his wife invited us to stop in at his Mom’s house near Johnson City, Tennessee, for a meal. There were a lot of us there at that dinner. And Ruth and her daughter (our pastor’s sister) put on a huge spread. Everyone was so welcoming. We ended up having a delightful time even though we went thinking we would only know a couple of people.
Everything was so good, I came away with 3 or 4 recipes including this one. I’ve made the Carrot Souffle lots of time over the years. I had forgotten about this side dish until I was looking through recipes and remembered that I hadn’t made it yet. I’m so glad I dug this vintage recipe out of the old files because it is certainly worth eating.
This is a fabulous casserole for Thanksgiving, Christmas or other holiday dinners. But it’s certainly worth putting on your regular dinner rotation or having for company. You will probably find that everyone will want seconds or thirds of this irresistible Cheesy Squash Casserole. We sure did. Yum.

Celery and onion flavor this casserole along with the Ritz cracker crumbs on top.
And of course, cheese makes everything better!
Here’s what I did.
I used these ingredients.
Slice and boil the squash until tender.
Drain.
In a mixing bowl, place diced onion, celery, cheddar cheese, sour cream, salt and pepper.
Add the squash.
Stir ingredients gently to combine. Don’t be too vigorous or the squash won’t hold its shape.
Place squash mixture in a greased baking dish.
Add melted butter to Ritz cracker crumbs and cheddar cheese in a small mixing bowl.
Stir ingredients to combine.
Spread topping over top of squash in baking dish.
Bake at 300 degrees for 30-40 minutes or until crackers start browning lightly and the casserole is bubbly around the edges.
Cheesy Squash Casserole is perfect for company or holiday dinners like Thanksgiving or Christmas.
Our company raved over this squash casserole dish and kept going back for additional helpings.
I served Cheesy Squash Casserole with Garlic Mashed Potatoes and Texas BBQ Ribs.

CHEESY VEGETABLE CASSEROLE
(Recipe from Ruth Simmons, Johnson City, TN)
Cheesy Squash Casserole
Equipment
- 1 2-quart baking dish
- 1 sharp knife to cut vegetables
- 1 stock pot with lid
- 1 colander
- 1 large mixing bowl
- 1 wooden spoon
- 1 Rolling Pin or crush the Ritz crackers in your hands
- 1 small bowl
- 1 fork
Ingredients
- 2 cups zucchini sliced, cooked and drained
- 2 cups yellow squash sliced, cooked and drained
- 1 cup celery diced
- 1/3 cup onion diced
- 1 cup sour cream
- 1/2 cup sharp Cheddar cheese shredded
- 1/4 tsp. sea salt
- 1/8 tsp. pepper to taste
- 2 cups Ritz crackers crushed (measure after crushing)
- 1/2 cup salted butter melted (1 stick)
- 1/2 cup sharp Cheddar cheese shredded
Instructions
- Cook fresh squash until tender – about 5-7 minutes.
- Drain in colander; transfer squash to a large mixing bowl.
- Combine squash with celery, onion, sour cream, 1/2 cup of Cheddar cheese and salt and pepper to taste.
- Pour mixture into greased 2 qt. casserole dish.
- Combine Ritz cracker crumbs, butter and remaining half cup of cheddar cheese in a small bowl with a fork.
- Sprinkle cracker crumb mixture on top of veggies.
- Bake at 300 degrees for 30-40 minutes.
