Honey Roasted Peanut Cookies
Honey Roasted Peanut Cookies turned out to be one of the best “bombs” ever! These lovely “Peanut Butter Cookies” include a large dose of honey roasted peanuts in every bite. They’re crunchy and overloaded with scrumptious peanutty flavor. Did I say they are delicious?? 🙂
My son purchased two huge containers of peanuts for us quite some time ago, that really needed to be used up. We don’t really eat honey roasted peanuts (on their own) so they’ve been sitting in my pantry taking up space. A LOT of space. So I decided to toss them into some of our favorite Peanut Butter Cookies and see how they would turn out.
I put a note out on our community FB group and asked if I had any volunteers and to give me feedback on what they thought about them. One person said she thought they had too much stuff and she preferred a creamier, smoother cookie (without all the add-ins). About 30 other people called, texted or shared how much they enjoyed the cookies. Several even raved over them. Several who really enjoy Peanut Butter Cookies asked for the recipe!
Truly, Honey Roasted Peanut Cookies were a huge hit with our neighbors. Some said they would be happy to sample cookies and provide feedback ANYTIME I wished to bake. 🙂 Our personal take was that we loved them. One of our neighbors likes to freeze cookies and then eat them really cold. She had one that way and another microwaved to reheat. She thought they were terrific each way.
My goal was to use up this canister of honey roasted peanuts so I used 3 1/2 cups in each batch of Peanut Butter Cookies so I could use them up. I’m sure you could get away with about 2 cups in each batch and still be fine. Regardless, Honey Roasted Peanut Cookies are fabulous for tailgating or office parties, potlucks, backyard barbecues or taking to soccer practice. I’d also recommend them for Christmas Cookie Exchanges since that will be coming up before you know it! Enjoy.

These Peanut Butter Cookies are loaded with Honey Roasted Peanuts.
They’re chunky, rich and utterly delicious.
I had so many people ask me for the recipe for these scrumptious cookies!
Here’s what I did.
I used these ingredients.
Soften butter. Add granulated sugar, brown sugar, creamy peanut butter, eggs and vanilla.
Mix ingredients with an electric mixer until smooth and creamy.
Place unbleached flour in a mixing bowl (bleached flour toughens baked goods). Add baking powder, baking soda and salt.
Stir well to combine.
Add flour mixture and honey roasted peanuts to the creamed mixture. (While I used 3 1/2 cups of peanuts because I was trying to use them up, you can decrease the amount to two cups if you desire).
Stir well until all the flour has been completely mixed into the dough.
Scoop dough with a large cookie scoop and place about 3-inches apart on greased cookie sheets or pans.
Bake at 350 degrees about 12-15 minutes or until done. My cookies were large so they took about 20 minutes to bake completely. Rotate cookie sheets on racks every 8 minutes of baking time.
These hearty cookies are chocked full of peanutty goodness.

These cookies are wonderful to take to soccer and gymnastics practices, tailgating or office parties, potlucks or backyard barbecues.

Here’s the recipe.
HONEY ROASTED PEANUT COOKIES
(My own concoction)
Honey Roasted Peanut Cookies
- 3 large cookie sheets or pans
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- 1 spatula
- 1 1/4 cup cookie scoop
- measuring cups
- measuring spoons
- 1 cup salted butter softened (2 sticks)
- 1 cup creamy peanut butter
- 3/4 cup granulated sugar
- 3/4 cup light brown sugar packed
- 2 large eggs
- 1 1/2 tsp. vanilla extract
- 2 1/2 cups unbleached all-purpose flour bleached flour toughens baked goods
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. sea salt
- 3 1/2 cups honey roasted peanuts
- Preheat oven to 350 degrees.
- Cream butter, peanut butter, sugars, eggs and vanilla in a large mixing bowl with an electric mixer until fluffy.
- Stir flour, baking powder, baking soda and salt together.
- Gradually stir dry ingredients and honey roasted peanuts into peanut butter mixture.
- Keep stirring until thoroughly mixed; this may take 3-5 minutes.
- With a large cookie scoop, scoop cookie dough and press the dough gently into the cookie scoop before leveling it off.
- Place onto greased cookie sheets approximately 3-inches apart.
- Bake 12 to 15 minutes or until lightly browned.
- Rotate cookies on racks every 6 to 7 minutes of baking time.
- Cool completely.
NOTE: When I was baking two racks at a time, my cookies took 21 minutes to bake. When I baked a single rack (and didn’t need to rotate the cookies), the cookies took about 15 minutes to bake. Smaller cookies won’t take so long to bake.
NOTE: You can use crunchy peanut butter if that’s all you have. But this recipe already has a lot of crunch!
NOTE; I used 3 ½ cups because I was trying to get rid of a large container of peanuts. You can decrease this amount to about 2 cups if you prefer less peanuts.

I wondered how the honey roasted peanuts would do in the batter – if they would overwhelm the taste or not, but these really turned out wonderfully.
