Gluten Free Almond Poppyseed Muffins are really delightful. These moist, delicious muffins include almond extract and finely diced almonds to give it that pop of almond flavor. Poppyseeds also increase the flavor and texture. I used King Arthur gluten free flour and thought the muffins turned out wonderfully well in texture and taste.

Our church hosts a “Grandmas in Prayer” group to pray for our grandchildren and the public and private schools in our city. We meet every Thursday morning during the school season. It’s an honor and privilege to lift up these schools and our own grandchildren in prayer each week. Back in August, we hosted an open house to attract more grandmas to join us. We had lots of breakfast type foods including these muffins.
I thought it would be nice to take a regular muffin recipe and convert it to gluten free in case anyone came with gluten intolerance. We had some muffins left over afterwards so I handed them off to one of our staff guys whose wife prefers gluten free food. Everyone really enjoyed these muffins.
Don’t be alarmed at how soupy the batter looks in this recipe. The thing with GF flour is it absorbs other ingredients more slowly than wheat flour, but in the end it does the trick. Don’t make the mistake of adding extra flour or the muffins may turn out tough. Thankfully, gluten free flour is much more abundant now and has a much better consistency than it did 10-12 years ago when gluten free products first started coming out. I thought King Arthur’s GF flour was very easy to work with and made an excellent GF muffin.
Gluten Free Almond Poppyseed Muffins are easy to prepare and make a wonderful addition to your weekend, company or holiday breakfast or brunch menu. Try them for Thanksgiving, Christmas or New Year’s and everyone will love them.

These gluten free muffins are great to bake for family, company or holiday breakfasts when you have GF friends attending.
Here’s what I did.
I used these ingredients.
Place sugar in a mixing bowl. Add eggs, poppyseeds, almond extract, baking powder and salt.
Add finely diced almonds and oil.
Add half-and-half.
Whisk ingredients.
Add gluten free flour.
Stir gently until the GF flour is worked into the other ingredients. But DO NOT OVERMIX!
Place paper liners in 12 muffin tins. Spray with cooking spray. Spoon muffin batter into sprayed paper liners.
Bake muffins at 425 degrees for 5 minutes. Reduce heat to 350 degrees. Continue baking 13-15 minutes more or until a toothpick inserted in center comes out clean.
Gluten Free Almond Poppyseed Muffins are great for tea parties or brunch.
Almonds and poppyseeds provide a really great pairing. These muffins are fantastic.

If you want to make these muffins even healthier, consider substituting avocado oil and monkfruit sugar for the regular sugar and oil in the recipe.

GLUTEN FREE ALMOND POPPYSEED MUFFINS
(My own concoction)
Gluten Free Almond Poppyseed Muffins
Equipment
- 1 12-tin muffin pan
- 1 6-tin muffin pan
- 14 paper muffin liners
- 1 whisk
- 1 large mixing bowl
- 1 wooden spoon
- measuring cups
- measuring spoons
Ingredients
- 1 3/4 cups gluten free flour (I used King Arthur GF flour)
- 1 cup granulated sugar
- 1 tsp. baking powder
- 1/2 tsp. sea salt
- 1/2 cup canola oil or use coconut oil or avocado oil
- 3/4 cup half-and-half
- 2 large eggs
- 1 tsp. almond extract
- 2 tbsp. poppyseeds
- 1 cup almonds chopped (measure after chopping)
Instructions
- Heat oven to 425°.
- Grease a 12-cup muffin tin or line with paper liners. (You actually need 14 muffin tins).
- Spray paper liners with cooking spray.
- In a large bowl, whisk granulated sugar, baking powder, salt, oil, half-and-half, eggs, poppy seeds, chopped almonds and almond extract until smooth.
- Add gluten free flour and mix gently, just until moistened.
- DO NOT OVERMIX THE BATTER!
- Fill prepared muffin tins almost full.
- Bake at 425° for 5 minutes.
- Reduce temperature to 350° and continue baking about 13-15 more minutes or until muffins test done with a toothpick inserted in centers.
- Cool in pan on wire rack.
