Tropical Trail Mix Overnight Oatmeal

Tropical Trail Mix Overnight Oatmeal is my husband’s favorite version of using steel-cut oats. This one includes one of his favorite trail mixes (Tropical) which means there’s a lot of fruit in it. Tropical Trail Mix includes bananas, papayas, pineapple, dried cranberries, raisins, cashews and almonds. The oatmeal also includes a brown sugar oat creamer, along with oat milk, vanilla and cinnamon to bring out all the flavors.

The first time I made this recipe, I didn’t bother taking any pictures because I had no idea it would turn out so well or that John would rave over it so much. I actually threw it together as a lark. But it turned out so well that I decided to make it again. The second time I made it, I actually took a few pictures, although I just threw everything into the crockpot instead of into a mixing bowl to begin with. (Everything still came out wonderfully).
As I stated above, John just loves oatmeal made this way. In fact, he told me I could make oatmeal this way from now on….hahaha! However, because it’s not as healthy as using plain fruit, I probably won’t make it EVERY time. 🙂 Tropical Trail Mix adds a lot of body to the oatmeal. As it cooks in the crockpot, the heat softens all the fruit (and nuts) so they are not as hard and crunchy as right out of the package. He thinks the oatmeal is just about perfect that way (and not so hard that it chips or cracks your teeth when you’re eating it!!!)
Tropical Trail Mix Overnight Oatmeal is a delightful way to enjoy oatmeal for breakfast. Because I put so much extra liquid in this before cooking, it took closer to five hours to cook rather than the usual 4 hours. I recommend a slow cooker with a programmable timer and set it for when you want it done in the morning.
Otherwise, make it during the day and pack it up in containers to eat on during the week. You can also freeze the oatmeal and reheat it after you thaw it for a delicious on-the-go breakfast. Enjoy.
Tropical Trail Mix Overnight Oatmeal is deliciously flavored.
While there is no extra sugar in the recipe, there is plenty of sugar from the sweetened fruit in the trail mix and from the brown sugar oat creamer. You won’t need any more.
This overnight oatmeal recipe is absolutely delightful.
Here’s what I did.
I used these ingredients.
Pour a 24-ounce bag of steel-cut oats into the slow cooker.
Add oat milk.
Add brown sugar oat creamer.
Add cinnamon.
Add salt.
Add vanilla.
Add water.
Add Tropical Trail Mix (I purchase it at Walmart).
Stir ingredients to combine. Don’t worry if the cinnamon is not totally worked into the oatmeal; you can do that later.
Cook about 5 hours on low heat; stir oatmeal so that the cinnamon is finally worked into it.
Sprinkle the cooked oatmeal with a handful of Tropical Trail Mix before serving.
Serve Tropical Trail Mix Overnight Oatmeal with more Tropical Trail Mix added over the top of individual servings, if desired.
You can pack the oatmeal into individual serving containers and heat up during the week for breakfast.
The nuts and the banana chips soften while the oatmeal is cooking so they’re not too hard to eat.

TROPICAL TRAIL MIX OVERNIGHT OATMEAL
(My own concoction)
Tropical Trail Mix Overnight Oatmeal
Equipment
- 1 7-quart slow cooker
- 1 wooden spoon
- measuring cups
- measuring spoons
Ingredients
- 24 oz. steel-cut oats (I used Bob’s Red Mill known as pinhead oats or Irish oats)
- 59 oz. container oat milk
- 1 pint oat creamer with brown sugar
- 1 pint water
- 2 tbsp. cinnamon or more if desired (tablespoons NOT teaspoons)
- 1 tsp. sea salt
- 1 tbsp. vanilla extract (I used imitation vanilla) tablespoon NOT teaspoon
- 4 cups Tropical Trail Mix or trail mix of your choice
Instructions
- Spray a large 6 or 7-quart crockpot very generously with cooking spray.
- Combine ingredients and spread into crock pot.
- Cook on low overnight for approximately 5 hours.
- Serve garnished with additional Trail Mix and a dash of cinnamon, if desired.
