Pineapple Chiffon Salad

Oh my gosh, guys. I pulled out an old vintage recipe of my Mom’s to make this delicious Pineapple Chiffon Salad. This is a super easy 4 ingredient recipe! Yes, only four ingredients. It uses lime gelatin, cream cheese, Cool Whip (or any non-dairy whipped topping) and crushed pineapple. Well, yes, it uses boiling water, but most people don’t need to go to the store for that.

I took a meal to a friend who had surgery back in early June. That meal included Ravioli Lasagna, Rapid Rise Italian Herb Bread (made in the breadmaker!), Blueberry Almond Blondies, this salad and some Pineapple Macadamia Muffins for breakfast the next day. They were thrilled with the meal, and I got to pull out this old classic recipe my Mom made in the 50s and 60s mostly.
This congealed salad recipe is delightful. You can serve it in a glass bowl, but I chose to put it into parfait glasses instead. It’s really a light, refreshing, fruity salad that’s great for company or for hot, summer days. Those of you who live in Texas or the South, realize that hot, summer days drag on from May through October!
Pineapple Chiffon Salad is so easy and really terrific to make for holiday dinners too….summer holidays, Easter, Mother’s Day or Father’s Day…..My husband loves pineapple, so I can make this any time of the year and he would be a happy camper. Enjoy.
Pineapple Chiffon Salad is a delightful salad for holidays or company dinners.
This delicious salad uses only 4 ingredients!
You can make this congealed salad in parfait dishes a glass bowl or a small trifle dish or even in a small pyrex dish.
If you enjoy pineapple, you’ll enjoy this delightful salad.
Here’s what I did.
I used these ingredients, plus water.
Pour lime gelatin into a mixing bowl.
Add boiling water.
Stir until the gelatin is completely dissolved.
Add crushed pineapple along with the juice.
Stir ingredients and refrigerate 30 minutes.
Add softened cream cheese.
Whisk ingredients until the cream cheese is broken up into very small pieces. Refrigerate 30 minutes.
The mixture will thicken and set up a little more in the refrigerator. Whisk ingredients again before adding whipped topping.
Whisk the whipped topping into the other ingredients. Pour into parfait molds, a trifle dish or glass bowl and refrigerate several hours or overnight.
If you desire, pour the salad ingredients into parfait dishes.
You can serve out of champagne or wine glasses if you prefer.
Or you can pour the mixture into a bowl or dish of any kind. Refrigerate until ready to serve.
Pineapple Chiffon Salad is great to make for special occasions like Mother’s Day, Father’s Day, summer holiday menus or even St. Paddy’s Day. 🙂

PINEAPPLE CHIFFON SALAD

Pineapple Chiffon Salad
Equipment
- 1 small trifle dish or glass bowl, or parfait dishes
- 1 mixing bowl
- 1 whisk
- 1 wooden spoon
- measuring cups
Ingredients
- 3 oz. pkg. lime gelatin
- 1 cup boiling water
- 2 cups Cool Whip or other non-dairy whipped topping
- 8 oz. pkg. cream cheese softened
- 1 cup crushed pineapple UNDRAINED
Instructions
- Dissolve gelatin in boiling water.
- Add crushed pineapple with liquid.
- Cool in refrigerator about 30 minutes.
- Add softened cream cheese.
- Stir well with whisk.
- Refrigerate an additional 30 minutes.
- When mixture is thick, beat.
- Add whipped cream and stir until well combined.
- Chill several hours or overnight.
