Butterfinger Ooey Gooey Bars
Butterfinger Ooey Gooey Bars will rock your world! Truly. 🙂 These incredibly delicious brownies were probably the most loved cookie from our Christmas Cookie Extravaganza this past year. The Butterfinger Meltaways were a very close second. Everyone raved over these jewels. The great thing about this recipe is it uses only 6 ingredients. That’s right! Only six ingredients. It’s an easy recipe even your kids can make.

I made four different kinds of Ooey Gooey Bars for Christmas baking this year. All four got rave reviews. These ones with Butterfingers came in first place. But everyone loved the Snickers, Heath Toffee and Reese’s Peanut Butter Cup as well. These lovely Ooey Gooey Bars have a luscious Cheesecake filling that makes them extra rich and decadent. But who can resist lots of chopped Butterfingers on top? No one. 🙂 They are irresistible.
Butterfinger Ooey Gooey Bars are terrific to make for holiday baking and a Christmas Cookie Exchange, but they’re also an excellent choice when you have a lot of Halloween candy on hand that you want to get rid of. Besides that, it’s an easy recipe that includes ingredients that can be purchased year round, so it’s not limited to bake for just the holidays.
If you’re in need of a dose of chocolate and peanut butter, Butterfinger Ooey Gooey Bars are just the thing! Every drool-worthy bite will have you swooning. But be prepared. These goodies will be gobbled down incredibly fast. Better have enough ingredients for a second batch. 🙂

This recipe uses only 6 ingredients. It’s so easy even your kids can make this!
These irresistible brownies received the highest marks of anything I baked during the holidays this year!
Be warned! These brownies are so good you may be asked to make more than one batch!
Here’s what I did.
I used these ingredients.
For Crust Layer: Pour cake mix into a mixing bowl. Add egg and melted butter. (This picture shows a double batch.)
Stir to combine.
Press mixture into a greased 9×13″ glass baking dish. I was making double batches so this picture shows a double recipe put into an 18×26″ baking pan.
If the mixture seems a little too sticky to spread with your hands, sprinkle very lightly with flour and press the crust mixture into the pan stretching it to the edges.
For Cheesecake Layer: In a separate mixing bowl, combine softened cream cheese, remaining eggs and powdered sugar.
Mix with an electric mixer until mixture is completely smooth and creamy.
Spread cream cheese filling over top of crust layer with a rubber spatula.
Spread the cheesecake mixture all the way to the edges of the dish or pan.
For Butterfinger Layer: Remove wrappers from Butterfingers. Place on a cutting board and chop finely.
Sprinkle the finely chopped Butterfingers over top of the cheesecake layer.
Bake at 350 degrees for about 40-45 minutes, until set. Remove from oven and cool completely.
It is easier to cut these bars if you refrigerate them a few hours beforehand.
Butterfinger Ooey Gooey Bars are heavenly. You won’t be able to stay out of them!

BUTTERFINGER OOEY GOOEY BARS
(Recipe inspired from Angela Russell’s Ooey Gooey Bars, Hillcrest Baptist Church, Cedar Hill, TX)
Butterfinger Ooey Gooey Bars
Equipment
- 1 9×13" glass baking dish
- 2 large mixing bowls
- 1 electric mixer
- 1 rubber spatula
- 1 wooden spoon or fork to stir crust layer
- 1 sharp knife to chop Butterfingers
- 1 large bread board to chop Butterfingers
- measuring cups
- measuring spoons
Ingredients
- 15.25 oz. box butter flavor yellow cake mix
- 1/2 cup salted butter melted, (1 stick) or use unsalted
- 3 large eggs divided use
- 8 oz. pkg. cream cheese softened
- 1 lb. box powdered sugar (if using from a 2-lb. bag, weigh sugar to get exactly one pound)
- 2 cups chopped Butterfinger Bars
Instructions
- Mix together cake mix, butter and one egg in a large mixing bowl.
- Pat the mixture in the bottom of a greased 9 x 13” glass baking dish with your hands.
- Mix remaining two eggs, cream cheese and box of powdered sugar together in a separate mixing bowl with electric mixer.
- Beat until completely smooth and creamy and pour over crust mixture.
- Sprinkle chopped Butterfinger Bars over top, spreading evenly.
- Bake at 350° for 40-45 minutes, or until mixture is set on top and not wiggly.
