Oh my! Another melt-in-your-mouth kind of cookie. This one is filled with Butterfinger Candy Bars. One delightful yum. These unbelievable Butterfinger Melltaways are absolutely outstanding! In fact, these cookies are so irresistible you’ll be swooning over every one. 🙂

I wasn’t planning on baking Butterfinger Meltaways for our annual Christmas Cookie Extravaganza give-away this year. But I had so many bags of Butterfingers leftover after making the Butterfinger Ooey Gooey Bars, that I wanted to do something with them. I had made a batch of Tropical Pineapple Meltaways and Cherry Meltaways this year. So I used the same basic recipe and made up about six batches of these jewels as a late addition to the rest.
I just loved the way these Butterfinger Meltaways turned out. And if you’re a Butterfinger fan, you will too! The only labor intensive part of baking this cookie is unwrapping and chopping up the Butterfinger Bars. To save time, you can easily do that the night before and put the contents in a zip-lock bag until you’re ready for them.
Butterfinger Meltaways are perfect for tailgating parties, holiday or office parties, a Christmas Cookie Exchange or any kind of potluck. The cookies simply dissolve in your mouth and are so outrageously good you won’t be able to stop at just one! If you need to cure a sweet tooth craving, Butterfinger Meltaways are just the thing. Here’s the recipe.
I used these ingredients.
Soften butter and place in a large mixing bowl. I was making six batches so put half of the butter in this bowl and half in another!
Add granulated sugar, powdered sugar, eggs, cream of tartar, baking soda, salt and pure vanilla extract.
Now add oil.
Beat ingredients with an electric mixer until ingredients are smooth and creamy.
Remove wrappers from Butterfinger Candy Bars. Chop Butterfinger Bars.
Add unbleached all-purpose flour. (Bleached flour toughens baked goods). Add chopped Butterfinger Bars.
Stir until ingredients are very well mixed.
Roll cookie dough into golf ball-sized balls and then roll the cookies in a bowl of granulated sugar.
Place balls on greased cookie sheet pans.
Bake cookies at 350 degrees for approximately 12-15 minutes or until done. (My cookies took 18-19 minutes to bake completely). Rotate cookie sheet pans on oven racks after eight or nine minutes of baking time.
After cookies cool completely, remove to cookie platters and serve!

BUTTERFINGER MELTAWAYS
(My own concoction)
Butterfinger Meltaways
Equipment
- 3 18×26" cookie sheet pans
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- 1 small bowl
- 1 sharp knife to chop the Butterfingers
- measuring cups
- measuring spoons
Ingredients
- 1 cup salted butter softened (2 sticks)
- 1 cup canola oil (or use avocado oil or coconut oil)
- 1 cup granulated sugar
- 1 cup powdered sugar
- 2 large eggs
- 5 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 1 tsp. cream of tartar
- 1 tsp. baking soda
- 1 tsp. sea salt
- 2 tsp. pure vanilla extract
- 2 cups Butterfinger Bars chopped
- 1/2 cup granulated sugar to roll the cookies in
Instructions
- Combine butter, oil, granulated sugar, confectioners’ sugar, eggs, baking soda, cream of tartar, salt and vanilla extract in a large mixing bowl.
- Mix with an electric mixer until creamy and smooth.
- Stir in flour and chopped Butterfingers with a wooden spoon.
- Shape cookies into balls.
- Roll in granulated sugar.
- Put cookie balls 3" apart on cookie sheets that have been sprayed with cooking spray.
- Bake at 350° for 12-15 minutes.
- Rotate cookie sheets on oven racks after 8 minutes of baking time.
- Cool.

These cookies are so divine! I absolutely loved them and made them twice in a weeks’ time. I have tried them by using the original recipe and also by adding the lemon extract and peel and both versions were excellent.
