Bird’s Nest Pie
Don’t let the name fool you! This is more like an apple upside-down-cake rather than a pie. When it all comes together it looks sort of like a “Bird’s Nest”, hence the name. You could even think of this delicious dessert as being more like an apple cobbler. It is certainly not “pie” in the traditional sense. Truly, Apple Upside-Down-Cake would be the most appropriate description, but since I found this Taste of Home recipe listed as “Bird’s Nest Pie,” I kept the name. 🙂

I signed up to bring a meal to our church’s worship minister and family after the birth of their fourth child. That meal consisted of Swiss Steak with Mushrooms, Garlic Mashed Potatoes, Pineapple Casserole, Homemade Rolls, Company Fruit Salad and this Bird’s Nest Pie. I also made one of these Bird’s Nest Pies at the same time for us as well.
If you enjoy apples and moist cake-like desserts, then this lovely apple dessert is right up your alley. It only uses 9 ingredients so it’s pretty easy to toss together. The apple slices are layered in a pie plate, then a cake like batter is poured on top before baking. After baking the “pie,” the cake is inverted onto a plate so the apples are now on top. Then they’re sprinkled with a cinnamon-sugar-nutmeg mixture to top off the dessert. Yummy! Easy and delicious and perfect with a large scoop of vanilla ice cream. 🙂
I used Honey Crisp apples to make the recipe, but I think any sweet apple like Gala and Fuji will also work. This is a great recipe for your children to experiment with. They will enjoy the Bird’s Nest effect of this scrumptious dessert.
Bird’s Nest Pie is a scrumptious apple dessert.
This is really more like an Apple Upside-Down-Cake, than pie. But the configuration is more like a Bird’s Nest!!!
If you enjoy apple-flavored desserts, this one is wonderful.
Here’s what I did.
I used these ingredients.
Place unbleached flour in a large mixing bowl. (bleached flour toughens baked goods). Add granulated sugar, baking soda and cream of tartar.
Whisk ingredients to combine.
Add egg and buttermilk or soured milk.
Whisk ingredients to combine; mixture will be thick.
Core, peel and slice apples. Divide apples and place in two greased pie plates.
Spoon half of the batter over the apples in each pie plate.
Bake at 350 degrees for approximately 30 minutes, or until a toothpick inserted in center comes out clean.
Invert each pie plate onto a separate serving plate.
Combine granulated sugar, nutmeg and cinnamon in a small bowl.
Whisk or stir to combine.
Divide the cinnamon-sugar mixture in half and sprinkle each half over top of each Bird’s Nest Pie.
Best served warm, but you can serve it at room temperature, if desired.
Serve warm with ice cream, if desired.
The cinnamon-nutmeg-sugar mixture goes perfectly with the apples.
This is an easy dessert that can easily be made by kids.

Bird’s Nest Pie
Equipment
- 2 9-inch pie plates
- 1 paring knife
- 1 cutting board
- 1 large mixing bowl
- 1 whisk
- 1 small mixing bowl
- measuring cups
- measuring spoons
Ingredients
FILLING:
- 5 medium apples peeled and sliced (I used four large Honey Crisp apples)
- 2 cups unbleached all-purpose flour bleached flour toughens baked goods
- 1 cup granulated sugar
- 1/2 tsp. baking soda
- 1/2 tsp. cream of tartar
- 1 cup buttermilk or soured milk (see note below)
- 1 large egg
TOPPING:
- 1/4 cup granulated sugar
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
Instructions
FILLING:
- Grease two 9-inch pie plates.
- Divide apples evenly between the two pie plates; set aside.
- In a large mixing bowl, combine flour, sugar, baking soda, cream of tartar, sour milk and egg.
- Mix well.
- Dollop and spread half of the batter over top of each pie.
- Bake at 350º for 25-30 minutes or until pies are lightly browned and apples test done.
- Invert pie plates onto a serving plate.
- Apples will be on top.
TOPPING:
- Combine topping ingredients in a small bowl.
- Sprinkle half of the topping ingredients over each pie.
- Serve warm (with ice cream, if desired).
- Yield: each pie yields 6 servings; 12 total servings.

Don’t expect a pie crust type of pie with this recipe. This dessert is really an apple upside-down-cake.
