Garlic Parmesan Dinner Rolls

Teresa Ambra

I love, love, love, Garlic Parmesan Dinner Rolls. They’re perfect for any kind of a meal with pasta. But they’re also fantastic with soups, chilis or just because! This easy dinner roll starts with my Easy No Knead Dinner Rolls recipe. But then I add a tasty garlic and parmesan cheese topping that amps up the flavors enormously.

I made this recipe a couple of times. I used a couple of ideas from my Easy Garlic Parmesan Knots recipe. But I felt like that was too much parmesan cheese for these rolls. I cut back to one tablespoon cheese and only spread that on top of the rolls after baking. It was the perfect amount, and the rolls turned out fantastic.

I made the first batch of rolls and served them with Smoky Turkey Black Bean Chili. Both were delicious. The second time around I served the rolls with World’s Best Lasagna. Yes, please! I love dinner rolls anyway, but an easy no-knead recipe? Absolutely marvelous.

Garlic Parmesan Dinner Rolls are the perfect accompaniment to any dinner meal. If you bake them up for company or holiday meals, everyone will want seconds for sure! I’ll take two or three. (wink, wink).

Equipment

  • 1 breadmaker
  • 1 9x13" glass baking dish
  • 1 pastry brush to brush melted butter on the rolls
  • measuring cups
  • measuring spoons

Ingredients

DOUGH:

  • 1/4 cup salted butter slivered, (1/2 stick)
  • 1 1/2 cups half-and-half warmed (or whole milk)
  • 4 cups bread flour
  • 1/4 cup granulated sugar
  • 1 1/2 tsp. sea salt
  • 2 tsp. Fleischmann’s active dry yeast

TOPPING:

  • 6 tbsp. salted butter melted
  • 1 tsp. garlic powder or as desired
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried parsley
  • 1 tbsp. Parmesan cheese finely grated

Instructions

  • Place slivers of butter in a bread canister. (Or, if butter is softened, just put the whole piece of it in the breadmaker).
  • Warm half-and-half in microwave for about 1 ½ to 2 minutes at 50% power.
  • Pour half-and-half into bread canister.
  • Add bread flour and granulated sugar, then top with salt and dry yeast.
  • Turn on “dough” setting.
  • This will take about 1 hour 45 minutes.
  • Remove dough from breadmaker and form into 12 balls.
  • Stretch the tops of the dough on top and fold underneath to smooth out the wrinkles.
  • Grease a 9x13” glass baking dish generously with butter.
  • Place rolls in baking dish.
  • In a measuring cup melt butter.
  • Add garlic powder, oregano, parsley and basil.
  • Brush butter mixture generously over top of the dinner rolls.
  • Heat oven for one minute.
  • Place rolls in oven.
  • Every 15-20 minutes, heat the oven again for one minute.
  • Do this about 5 or 6 times until the rolls raise to the top of the baking dish.
  • This will take approximately one hour and 30 minutes (sometimes as long as two hours).
  • Leave rolls in oven and turn on oven to 350°.
  • Set timer for 25 minutes.
  • The rolls should be done by then, but check to see that the middle of the pan is no longer doughy.
  • If they are, cook another 5 minutes or so.
  • Remove rolls from oven.
  • Brush with remaining butter mixture.
  • Then sprinkle the rolls very carefully with the grated parmesan cheese being careful to give full coverage to the rolls.
  • Serve.

Notes

NOTE: I prefer bread flour because it contains more gluten and the ingredients bond together better. My daughter-in-law uses regular all-purpose flour with good results.

NOTE: For best results, do not use any lower percentage fat in the milk than whole milk. Half-and-half or even heavy whipping cream will work better.

NOTE: I usually warm the milk about one minute 30 seconds in the microwave on 50% power.

NOTE: To raise the rolls: I turn the oven on 350° for exactly one minute. Turn off heat and slide pan of rolls into the oven (uncovered). After 20 minutes, heat the oven again for one minute. Turn off oven. Repeat again every 20 minutes and allow rolls to continue raising until they reach the top edge of the pan. The rolls should warm in the oven for approximately 1 hour 30 minutes to get the dough to raise sufficiently. That is usually enough time for the rolls to be raised enough and fill the pan. (However, I have had it take as long as 2 hours). Then begin baking. Turn oven on 350° and set timer for 25 minutes. The rolls are usually finished baking by that time, but check to make sure the rolls in the middle are no longer doughy. Then remove from oven.

NOTE: I only use Fleischmann’s yeast – any kind of their brand. Other brands tend to fail more easily.

NOTE: Plan ahead! This process takes about 4 hours from beginning to end.
