Italian Herb Dinner Rolls are fantastic! I use my incredibly Easy No-Knead Dinner Rolls recipe and mingle it with my Rapid Rise Italian Herb Bread recipe. The result? Spectacular! I served these delicious dinner rolls with several things including Shortcut Minestrone Soup, Creamy Garlic Mushroom Chicken Thighs and Herb Roasted Parmesan Potatoes. It doesn’t matter what you serve them with, everyone’s gonna want seconds or thirds!

I know, I know, I’ve been on the dinner roll kick lately. I can’t get enough of them. Especially when there’s no mixing and no kneading! That’s a win-win for me. As I get older, I don’t always feel like taking the time to get real involved with recipes any more! A no-knead recipe where the breadmaker does all the work is perfect for me.

Italian Herb Dinner Rolls are seasoned with dried marjoram, thyme and basil. The combination of flavors is amazing in the bread recipe and it’s terrific in dinner rolls, too. These lovely dinner rolls are great with your favorite chili, soup or chowder entrees. But they’re also mouthwatering slathered with apple butter or jellies. 🙂 But then, I like apple butter on any kind of bread. 🙂 🙂

Cut butter into slivers and place in the bottom of bread canister.

Add warmed half-and-half. I usually microwave the cream at 50% power for about 1 1/2 minutes.

Add bread flour, sugar and sea salt. Spread as evenly over top as possible.

Add dried basil, marjoram and thyme. Then add yeast.

Place on “dough” setting of breadmaker. This will take about 1 hour 45 minutes.

Form dough into balls. Stretch and roll the dough so the wrinkles are removed from the top and hidden into the bottom of the dough.

Grease a 9×13″ baking dish with butter. Form 12 balls out of the dough and place evenly into baking dish.

Brush rolls with melted butter.

To raise the dinner rolls: Turn oven on for exactly one minute. Place rolls in oven (uncovered). Allow to raise 20 minutes. Turn oven on again for exactly one minute. Set timer for 20 minutes. Do this for approximately 1 hour 30 minutes or until the rolls have raised almost to the top of the pan. (I’ve had this take as long as two hours).

Keep rolls in oven and turn on 350 degrees. Set timer for 25 minutes. The rolls should be done, but if the middle feels doughy to the touch or too soft, bake 5 minutes more. Remove from oven.

Italian Herb Dinner Rolls are fantastic! These easy no-knead, no-mix dinner rolls are sure to please even the pickiest eaters. The dough raises in the breadmaker so it's incredibly easy to make. The rolls are seasoned with dried basil, thyme and marjoram which provides a lovely, delicate flavor. While these dinner rolls are wonderful with soup or chili, they're also terrific for company or holidays like Easter or Mother's Day dinners. These dinner rolls are comfort food you don't want to pass up!

Equipment

  • 1 breadmaker
  • 1 9x13" glass baking dish
  • 1 pastry brush to brush rolls with melted butter
  • measuring cups
  • measuring spoons

Ingredients
  

  • 1/4 cup salted butter slivered (1/2 stick)
  • 1 1/2 cups half-and-half warmed (or whole milk)
  • 4 cups bread flour
  • 1/4 cup granulated sugar
  • 1 1/2 tsp. sea salt
  • 1 1/2 tsp. dried marjoram
  • 1 1/2 tsp. dried thyme
  • 1 1/2 tsp. dried basil
  • 2 tsp. active dry yeast
  • 2 tbsp. salted butter for greasing the baking dish, plus butter to spread over top of the rolls

Instructions
 

  • Slice butter and place in bread canister.
  • Warm milk in the microwave one to two minutes until milk is warmed.
  • Pour into bread canister.
  • Then add bread flour, granulated sugar and salt.
  • Sprinkle dried herbs over top; then add yeast.
  • Place on dough setting of bread maker.
  • This will take approximately 1 3/4 hours.
  • Remove dough from bread canister and divide evenly into 12 sections.
  • Roll each section into a ball and place in a greased rectangular baking dish.
  • Be sure to stretch and roll the dough so the wrinkles on top of the dough smooth out.
  • Brush with a tablespoon or two of melted butter.
  • Put in a warm place until the rolls expand, about an hour and a half. (See notes below).
  • Bake at 350° for 17 to 22 minutes or until rolls are no longer doughy in the middle. (See notes below).
  • Remove from oven and brush with melted butter again before serving.

Notes

NOTE: I usually warm the milk about one minute 30 seconds in the microwave (at 50% power).
 
NOTE: I turn the oven on 350° for exactly one minute. Turn off heat and slide pan of rolls into the oven (uncovered). After 20 minutes, heat the oven again for one minute. Repeat again in 20 minutes. Continue heating for one minute and turning off the oven in cycles for approximately 1 hour 30 minutes, or until the dough raises almost to the top of the baking dish. (Sometimes this can take as long as two hours). Leave rolls in oven. Then begin baking. (See note below).
 
NOTE: I keep the rolls in the oven while the temperature raises to 350°. (This allows the rolls to raise a little more). I set a timer for 25 minutes. The rolls are usually done by that time. But check to make sure they are not doughy or too soft in the middle. If they are, continue baking for 5 more minutes. If you put the rolls in a preheated oven, it usually takes about 20 minutes for them to bake sufficiently.
 
NOTE: For best results, do not use any lower percentage of milk than whole milk.
 
NOTE: For best results, I recommend using Fleischmann’s yeast. Other brands have a tendency to fail more easily.
 
NOTE: Don't leave the marjoram out of the recipe. Purchase a jar and use it in breads, casseroles and soups. It makes everything so flavorful!
 
NOTE: Be warned! This recipe takes about 4 hours from beginning to end to make. Plan your time accordingly.
