Pear Gingerbread Muffins
I have a doozy of a recipe for you today! Pear Gingerbread Muffins use only four ingredients! They start with a box of Gingerbread Cake Mix so they are incredibly easy, peasy to whip up. Diced fresh pears add delightful sweetness to this already delicious recipe. I made the muffins in miniature and so we just kept popping them in our mouths. Just plain yum.

I made up a batch of these lovely muffins back in early June. I got the idea for them when I made a Pear Gingerbread Cake recipe in early spring. I kept it simple: the basic recipe ingredients for the Gingerbread cake (except I exchanged half-and-half for the water), plus grated pears. I always substitute half-and-half for water in cake recipes because it makes the cake (or in this case, muffins) so much richer in flavor.
I brought them to one of our Sunday morning Hostess Committee meetings and they were a big hit. It’s really hard to go wrong with a recipe that’s only 4 ingredients! Everyone enjoyed the Gingerbread flavors — even in early June! Because it made three dozen miniature muffins, I brought a third to church, gave a third away to neighbors and kept a third for John by stashing them in the freezer. He enjoys having a sweet treat now and then so I try to keep the freezers stocked with goodies.
Pear Gingerbread Muffins are a terrific breakfast idea for fall baking, Thanksgiving or Christmas brunch menus or even for tailgating parties during the holiday season. Add some hot cocoa or Apple Cider and you have comfort food with very little effort. Enjoy.

Each batch makes 3 dozen miniature muffins so they’re great sweet treats for your morning coffee – or to pop in your mouth throughout the day!
Each bite is mouthwatering.
If you enjoy the flavors of Gingerbread, this is a great treat to bake during fall and winter.
Here’s what I did.
I used these ingredients.
Place Gingerbread cake mix and an egg in a mixing bowl. Add half-and-half cream.
Whisk ingredients until smooth.
Peel and core the pear; grate down with a grater.
Add grated pear to Gingerbread mixture and stir well to combine.
Spray 3 dozen miniature muffin tins with cooking spray. Spoon in the Gingerbread mixture about 3/4 full.
Bake at 400 degrees for about 7-8 minutes, or until a toothpick inserted in center comes out clean.
Allow muffins to cool in muffin tins about 5 minutes before turning out onto wire cooling racks to cool. Transfer to a serving dish and serve.

PEAR GINGERBREAD MUFFINS
(My own concoction)
Pear Gingerbread Muffins
Equipment
- 36 miniature muffin tins
- 1 medium mixing bowl
- 1 whisk
- 1 wooden spoon
- 1 grater
- 1 sharp knife to peel and core pear
- 1 cutting board
- 2 wire cooling racks
- measuring cups
Ingredients
- 14.5 oz. box Gingerbread cake mix
- 1 1/4 cups half-and-half
- 1 large egg
- 1 large pear peeled, cored and grated
Instructions
- Preheat oven to 400°.
- Spray 36 miniature muffin tins with cooking spray.
- Set aside.
- Peel and core pear; discard peel, core and seeds.
- Grate pear and set aside.
- In a mixing bowl, beat cake mix, half-and-half and egg with a whisk until smooth and creamy.
- Stir in pears.
- Batter will be thin.
- Spoon batter into greased muffin tins about ¾ full.
- Bake at 400° approximately 7-8 minutes, or until a toothpick inserted in center comes out clean.
- Allow muffins to cool in pans about 5 minutes before removing to wire cooling racks to cool completely.
