Apple Cranberry Bread
During the Holiday season between Thanksgiving and New Year’s Day, sweet breads are really popular. I like every kind of sweet bread imaginable, but I have to admit I’m partial to anything with fresh cranberries. Apple Cranberry Bread includes apples, cranberries, pecans and cinnamon which brings out that rich, vintage flavor that I grew up with. This is a delicious sweet bread recipe.

I bake a lot of muffins, sweet breads or scones for our Sunday morning Hostess Committee at our church. We usually end up serving about twice a month even though we are only on the schedule once a month. I try to bring in goodies for those Sunday mornings that I usually bake a day in advance.
Once cranberries became available back in October this year, I started baking Christmas goodies with cranberries! I thought this bread would be a great new recipe to try out and I was right! It wasn’t difficult to make and it turned out really well. Even though cranberries were extremely tart this season, everyone enjoyed this sweet bread. The apples are slightly sweet and balance out some of the tartness from the cranberries.
If you’re in the mood for cranberry anything, give this delightful sweet bread a try. While you’re at it, give a loaf to a neighbor or friend since it makes four miniature loaves! 🙂

Here’s what I did.
I used these ingredients.
Wash cranberries in a colander.
Pat cranberries dry between layers of paper towels; set aside.
In a medium mixing bowl, pour unbleached all-purpose flour (bleached flour toughens baked goods). Add cinnamon, baking powder, baking soda and salt.
Stir ingredients well to combine.
In a separate mixing bowl, pour granulated sugar. Add eggs and oil.
Whisk ingredients until smooth and well-incorporated.
Pour flour mixture into egg mixture.
Add pecans, cranberries and peeled, diced apples.
Stir ingredients to combine; mixture will be on the dry side, but stir thoroughly.
Spoon mixture about two-thirds full into four greased and floured miniature bread pans.
Bake at 350 degrees about 30-45 minutes, until a toothpick inserted in center comes out clean.
Allow bread loaves to cool in pans 10 minutes before removing from pans and transferring to wire cooling rack to cool completely.
Slice down and serve.
Apple Cranberry Bread is delicious served with butter, honey or a cream cheese spread.

Apple Cranberry Bread
Equipment
- 4 miniature bread loaf pans
- 1 large mixing bowl
- 1 medium mixing bowl
- 1 whisk
- 1 wooden spoon
- 1 wire cooling rack
- 1 colander
- 1 nut chopper (if pecans aren't previously chopped)
- measuring cups
- measuring spoons
- 1 sharp knife to dice apples
- 1 paring knife
- 1 cutting board
Ingredients
- 2 large eggs
- 3/4 cup granulated sugar
- 2 tbsp. canola oil or avocado oil
- 1 1/2 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 1 1/2 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. baking soda
- 1/2 tsp. sea salt
- 2 cups apples peeled, cored and diced (I use Gala, Fuji or Honey Crisp)
- 1 cup fresh cranberries
- 1/2 cup pecans or walnuts, chopped (measure after chopping
Instructions
- Grease and flour 4 miniature bread loaf pans; set aside.
- Preheat oven to 350°.
- Meanwhile, in a large mixing bowl, beat eggs, granulated sugar and oil; set aside.
- In a medium mixing bowl, combine flour, baking powder, cinnamon, baking soda and salt.
- Add flour mixture to egg mixture along with apples, cranberries and walnuts.
- Stir until well combined.
- (Batter will be thick).
- Spoon batter into prepared baking pans about 2/3 full.
- Bake at 350° approximately 30-45 minutes, until a toothpick inserted in center comes out clean.
- Allow loaves to cool for 10 minutes before removing from pans and transferring bread loaves to a wire rack to cool completely.
- Slice and serve.
- Store in air-tight container.
- Refrigerate after two days.
