Slow Cooker Chunky Chili

Slow Cooker Chunky Chili is so delicious and easy to make. This chili recipe is made in the crockpot and uses two kinds of meat: ground beef and ground sausage. It also includes lots of kidney beans, diced tomatoes with green chilis, bell peppers and onions and Homemade Taco Seasoning (but you can purchase at the store if you don’t want to make your own). The chili is chunky (which we prefer over thin and runny) and really has great flavor. Add some cornbread or rolls and you’re good to go!

I made Slow Cooker Chunky Chili after my son and daughter-in-law gave birth to their second child in April. I served it with my favorite Chunky Homemade Guacamole (although I made it smoother this time), a Pecan Pear Tossed Salad and Double Chocolate Torte. Everything turned out so wonderfully. Except for the dessert, the rest of the meal was gluten free (so her sister could eat everything). I had already brought over some gluten free brownies so her sister had her own dessert to enjoy for the week she was visiting there. 🙂
I started the chili early in the morning and then quickly tossed together the salad, salad dressing and guacamole. Even the dessert was made early in the day so all I had to do was assemble it all together and bring it by later in the day when they were ready for the meal.
Slow Cooker Chunky Chili is a great recipe for tailgating parties during the winter or any time in the fall when you want a hot meal to warm you up. I served it with sour cream, tortilla and corn chips, green onions, jalapeño peppers and Cheddar cheese for toppings. Enjoy.
Slow Cooker Chunky Chili is delicious. The recipe does not call for jalapeño peppers, but you can add them if you want your chili to have some kick to it.
I served it with corn chips, jalapeño slices, sour cream and green onions.
It’s also great with cornbread or homemade rolls!
Here’s what I did.
I used these ingredients.
Crumble ground beef and sausage into a skillet over medium heat.
Chop the chili meat into small pieces with a hamburger chopper.
Cook until browned; drain any grease; then add Homemade Taco Seasoning or a packet of Taco Seasoning.
Stir ingredients to combine; remove from heat.
Transfer meat mixture to a crockpot.
Rinse and drain kidney beans in a colander.
Add to crockpot.
Add petite diced tomatoes, diced tomatoes with green chilis, onion and bell pepper.
Stir to combine; sprinkle with salt and pepper.
Stir ingredients again to combine.
Cover with lid; cook on high 4-5 hours until vegetables are tender.
I served the chili with these toppings.
Serve Slow Cooker Chunky Chili with toppings: cheese, sour cream, Fritos or Tortilla Chips, sliced jalapeños or green onions, if desired.
The green chilis and the taco seasoning provide a mild heat for the chili. It’s not an overly spicy or hot recipe.
Slow Cooker Chunky Chili is great for tailgating parties and potlucks.

SLOW COOKER CHUNKY CHILI

Slow Cooker Chunky Chili
Equipment
- 1 large slow cooker with lid
- 1 large skillet
- 1 wooden spoon
- 1 hamburger chopper to cut meat into small pieces while frying
- 1 colander
- 1 sharp knife to cut vegetables
- measuring cups
- measuring spoons
Ingredients
- 1 lb. lean ground beef
- 1 lb. mild pork sausage
- 64 oz. can kidney beans rinsed and drained (4 16-oz. cans)
- 29 oz. can diced petite tomatoes undrained
- 20 oz. can diced tomatoes with green chilis undrained
- 1 large onion chopped
- 1 medium green bell pepper seeded and chopped (I used an orange bell pepper)
- 1 packet Taco Seasoning or make Homemade Taco Seasoning
- 1/2 tsp. sea salt
- 1/4 tsp. ground black pepper
- toppings: sliced jalapeños, green onions, sour cream, cheddar cheese, Fritos and Tortilla Chips as desired (I used a Taco Blend Cheddar cheese)
Instructions
- In a large skillet over medium heat, cook beef and sausage until meat is no longer pink.
- Use a hamburger chopper to break meat down into small pieces while frying.
- Drain any grease, if necessary.
- Transfer meat to a slow cooker.
- Stir in remaining ingredients.
- Cover with lid and cook on high setting for 4-5 hours or until vegetables are tender.
- Serve with toppings, as desired.
