Bearnaise Sauce for Prime Rib Roast
Bearnaise Sauce for Prime Rib Roast rocks! It’s a spectacular French sauce to serve over prime rib or other pricey cuts of steak. The delicious creamy sauce is spiced with tarragon, chervil and ground mustard. It’s an amazing accompaniment for beef and incredibly easy to make since it’s all done in the microwave! This is my mother-in-law’s fabulous Bearnaise sauce recipe that we serve over prime rib whenever we make it. It’s actually a take-off on Hollandaise Sauce with some tweaks. This fantastic sauce is incredibly quick and easy to make yet so delicious to the taste buds.
If you’re looking for a wonderful sauce to serve with beef or even fish, this sauce is one you ought to consider trying. It’s tasty, economical, easy and just plain delightful. Our family loves this wonderful Bearnaise Sauce for Prime Rib Roast. We hope you will like it too.
When I initially published this recipe in December 2012, I was still taking pictures with an iPhone 3. Consequently my pictures were grainy and just not very good. I remade this recipe both in November and December 2017 and retook the pictures.
This time when I made the recipe, I made it two ways. I made it in the microwave in November and in December I decided to make it on the stove. One thing I recommend is adding the chervil for this recipe. I’ve had a jar in my spice rack for several years so I added it, even though my mother-in-law never used it. It’s a delightful herb even if it’s not used much here in the states.

Bearnaise Sauce for Prime Rib Roast is a wonderful gourmet sauce to serve over meats like prime rib, steak, boneless chicken breasts, fish, even lamb chops or pork chops.
Bearnaise Sauce for Prime Rib Roast is perfect for expensive cuts of beef like prime rib, salmon, boneless pork roast or even chicken. This delicious dinner entree pairs wonderfully with Cheesy Red Potatoes.
This easy recipe is really delicious on prime rib roast.
Here’s what I did.
I used these ingredients.
Melt butter in small skillet over low heat.
Add heavy cream.
Add lemon juice.
Add egg yolks.
Add ground mustard and salt.
Whisk everything together until smooth. Add diced, minced onion, tarragon, chervil and cooking wine. I normally don’t ever cook with wine but I’m trying to preserve this family recipe as it has been prepared in the past.
Cook over low heat until mixture thickens. Be careful not to overcook or the eggs and cream will curdle.
Here the sauce is ready to serve over the beef.
Ladle the Bearnaise Sauce over top of the prime rib. We served the prime rib with Cheesy Red Potatoes. The lumps in the sauce are from the diced onion.
Every bite of Bearnaise Sauce for Prime Rib Roast is succulent and amazing.

BERNAISE SAUCE FOR PRIME RIB

Bearnaise Sauce for Prime Rib Roast
Equipment
- 1 small saucepan
- 1 whisk
- 1 ladle
- 1 sharp knife to cut vegetables
- measuring cups
- measuring spoons
Ingredients
- 1/2 cup unsalted butter
- 1/2 cup light cream
- 2 tbsp. lemon juice
- 4 large egg yolks beaten
- 1 tsp. dry mustard
- 1/2 tsp. salt
- 2 tbsp. onion finely chopped
- 1 tsp. tarragon leaves
- 1 tsp. chervil leaves
- 1 tbsp. dry white wine cooking wine
Instructions
- Melt butter in a small saucepan over low heat.
- Add light cream, lemon juice, egg yolks, mustard and salt.
- Whisk until smooth.
- Add onion, tarragon, chervil and cooking wine.
- When wine is heated the small amount of alcohol in it will evaporate all at once.
- Continue cooking until sauce thickens - about 5 minutes.
- Beat well with whisk.
- This gives plenty of sauce for a full prime rib roast.
- Makes about 2 cups sauce.

- 1 tbsp. dry white wine (cooking wine)
- Melt butter in bowl in microwave.
- Add light cream, lemon juice, egg yolks, mustard and salt.
- Whisk until smooth.
- Add onion, tarragon, chervil and cooking wine.
- When wine is heated the small amount of alcohol in it will evaporate all at once.
- Microwave this batch for 1 minute on roast (50%).
- Beat well with whisk.
- Continue cooking for about 1 minute at 50% power until thickened.
- Check sauce and whisks it often till it’s thickened.
- This may take several minutes.
- Take it out of the microwave every minute or so and whisk the mixture.
- This took our microwave a total of about 6 ½ minutes.
- This gives plenty of sauce for a full prime rib roast.
- Makes about 2 cups sauce.

Hi, Teri. I’m not sure this would hold up making a lot in advance. We’ve always made it while the prime rib was resting after you take it out of the oven.
