I’ve been on a pie binge lately. 🙂 Cranberry White Chocolate Macadamia Nut Pie is a dessert you will not soon forget. And, just in time for the holidays! It bakes up into one perfectly scrumptious pie that’s so rich and so decadent you’ll feel you’re in seventh heaven.

I wanted to try making a White Chocolate Macadamia Nut Pie after I tried the Toll House Pie. But my husband bought so many pounds of macadamia nuts that I didn’t know what I was going to do with all of them. I ended up making two Toasted Coconut White Chocolate Macadamia Nut Pies and two of these luscious cranberry flavored pies.
I sent these out to John’s office with about ten or twelve pies one day. Everyone was gorging on pie for several hours. But they had ALL of those pies eaten by noon! I’m still getting comments about how much all of them enjoyed snagging a bite or two of those pies.
This is one terrific dessert for holiday parties and Christmas dinner menus. It’s festive, beautiful, elegant, and so awesome to the taste buds that you will become everyone’s hero overnight. 🙂 We served it with ice cream, but it’s so rich you may find you have to cut the pie in twelfths rather than eighths. Whichever way you cut it, all will enjoy this delectable dessert.

Cranberry White Chocolate Macadamia Nut Pie is awesome.
This spectacular pie is wonderful served with ice cream.
But it’s equally good plain if you’re trying to cut calories.
Here’s what I did.
I used these ingredients.
Roll out dough for pie crust.
Fit into pie plate and flute edges. Set aside. I was lazy and just pressed the edges down with a fork.
Beat eggs in a mixing bowl until frothy. This will take about 3-5 minutes.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add sugar and brown sugar.
Mix with an electric mixer until smooth.
Add melted and slightly cooled butter.
Mix on low speed of electric mixer until combined. Be careful of spatters.
Add craisins, white chocolate chips (NOT vanilla chips or premiere white baking chips) and chopped macadamia nuts.
Stir ingredients to combine.
Pour filling into prepared pie shell.
Bake at 325 for one hour or until set.
Serve warm or cold with whipped cream or ice cream.

CRANBERRY WHITE CHOCOLATE MACADAMIA NUT PIE
(My own concoction)
Cranberry White Chocolate Macadamia Nut Pie
Equipment
- 1 9-inch pie plate
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- 1 nut chopper if nuts are not previously chopped
- measuring cups
Ingredients
- 2 large eggs
- 1/2 cup UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 1/2 cup granulated sugar
- 1/2 cup brown sugar packed
- 1 cup unsalted butter melted and cooled slightly
- 6 oz. white chocolate chips (NOT vanilla chips or premiere white baking chips)
- 1 cup macadamia nuts chopped (measure after chopping)
- 1 cup dried cranberries
- 1 unbaked pie shell
Instructions
- Preheat oven to 325°.
- In large bowl, beat eggs until foamy; this will take 3-5 minutes.
- Beat in flour, granulated sugar and brown sugar until well-blended.
- Blend in the cooled, melted butter.
- Stir in dried cranberries, white chocolate chips and macadamia nuts.
- Pour into pie shell.
- Bake at 325° for 1 hour or until set.
- Serve warm with whipped cream or ice cream.
