I sent my husband to the store the day after Halloween to clean out the candy aisles for me. Did he ever! I think we had about a 55 gallon container filled with all kinds of candy. My only instructions were to get many different kinds of candies and they needed to have chocolate. I didn’t want Candy Corns, hard candies or weird candies like twizzlers, gummy bears or skittles. Just candy bar type candies. Not that those candies don’t have their place. I just don’t want them in pie or cookies.
I made twelve pies for my husband to take out to his office in early November. Those included Reese’s Peanut Butter Cup, Twix Candy Bar, Butterfinger, Milky Way, Baby Ruth and this Almond Joy Pie. The pies were all a rave. But someone stopped John a couple of days later when he saw him in the hallway. “That Almond Joy Pie was the best I’ve ever eaten!” Yes, that always puts a big smile on my face.
I get that not everyone does coconut. So if you despise coconut, then this recipe is not for you. But if you enjoy coconut, chocolate and almonds (and Almond Joy Bars), this dessert is superb. It’s super rich, with or without ice cream. It’s just one of those desserts you have to try for yourself.
Almond Joy Pie is terrific for company or holiday dinners like Valentine’s Day. But if you want to spoil your family, serve this over-the-top pie for dessert some night. Be prepared to have a run on the pie for seconds and thirds. Every crumb will be demolished in no time. 🙂

Here’s what I did.
I used these ingredients.
Roll out pie crust.
Fit pie crust into pie plate and flute edges. Set aside.
Beat eggs with an electric mixer until frothy. This will take between 3-5 minutes.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add sugar and brown sugar.
Mix with an electric mixer until smooth.
Add melted butter.
Mix with an electric mixer again until all the butter is incorporated. Be careful of splatters!
Add two cups chopped Almond Joy Bars.
Stir ingredients to combine.
Spread filling into prepared pie plate.
Bake at 325 for 45 minutes. Remove from oven.
Add additional cup of chopped Almond Joy Bars on top.
Bake about 30 minutes longer or until pie is set.
Allow to cool slightly before serving with whipped cream or ice cream.
Almond Joy Pie is the real deal.
