Creamy Chicken Sausage Vegetable Chowder

This is such a delicious recipe. Creamy Chicken Sausage Vegetable Chowder is made with chicken sausage instead of pork. It has a mixture of assorted veggies in a thick, creamy base. The seasoning is excellent and because I don’t use any flour to thicken the soup, it’s also gluten free.

I took a meal to a friend in January. She had a squamish cell carcinoma removed from the top of her head. I dropped off a pot of this amazing chowder, along with Jalapeno Bacon Cornbread and an Easy Cherry Crisp. Yes, they loved everything. While they are not hard to please where food is concerned, it’s always nice to know the food tastes good. 🙂 I had little nibbles of everything and thought all of it turned out quite well too.
I was trying to clean out refrigerators, freezers and my pantry back in January in anticipation of a move. I was actually trying to use up several quarts of half-and-half I purchased before my husband needed to go on a lower cholesterol diet. I found the chicken apple sausage in the freezer along with several frozen veggies. So it was helpful to use those things up as I tried to clear out everything before we moved.
I’m not sure if you’ve ever tried chicken sausage before but this stuff is really good. It flavored the chowder wonderfully and provided a little pop to give the chowder a little punch. If you like a hot bowl of soup on cold, winter days, this one is mouthwatering.
Creamy Chicken Sausage Vegetable Chowder is a marvelous main dish meal.
This soup is very hearty. It’s chocked full of veggies and meat.
It was wonderful with Jalapeno Bacon Cornbread. 🙂
Here’s what I did.
I used all these ingredients except the flour. I didn’t think the chowder needed any more thickening.
Place butter, onions and celery in a large saucepan or Dutch oven over medium heat.
Saute onions and celery in butter for a few minutes, until tender.
Add chicken broth.
Add mixed vegetables, corn and green beans.
Add sliced, grilled chicken sausage and asparagus spears cut in thirds.
Add seasonings.
Stir to combine.
Cover with lid and cook over low to medium heat until veggies are cooked – about 5-8 minutes.
Add half-and-half.
Add cheddar cheese.
Heat through until cheese melts.
Garnish with extra cheese to serve, if desired. Add a little Jalapeno Bacon Cornbread while you’re at it. 🙂

CREAMY CHICKEN SAUSAGE VEGETABLE CHOWDER
(My own concoction)
Creamy Chicken Sausage Vegetable Chowder
Equipment
- 1 large Dutch oven with lid
- 1 spatula
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 vegetable peeler
- 1 sharp knife to cut vegetables
- 1 soup ladle
Ingredients
- 1 lb. Aidell's chicken sausage sliced 1/8-inch thick or chopped (see note below)
- 1 1/2 cups potatoes diced, peeled
- 12 oz. bag mixed vegetables frozen
- 1 cup frozen corn
- 1 cup frozen green beans
- 1 cup frozen asparagus spears cut in thirds
- 2 ribs celery diced (I added about ½ cup celery leaves)
- 1 cup onion chopped
- 4 cups chicken broth
- 1/4 cup unsalted butter
- 4 cups half-and-half
- 1 tsp. sea salt
- 1/2 tsp. ground black pepper
- 1 tsp. dried marjoram
- 1 tsp. dried parsley
- 1 tsp. dried thyme
- 1 tsp. dried sage leaves
- 2 cups sharp cheddar cheese shredded
Instructions
- Put butter into a large Dutch oven.
- Add chicken sausage (if not previously grilled), onion and celery and cook about 5-7 minutes, or until sausage is cooked through.
- Add chicken broth until fully incorporated.
- Add potatoes, mixed vegetables, corn, green beans and asparagus.
- Stir in seasonings.
- Cover with lid.
- Bring to a boil and cook over medium heat until vegetables are tender, about 5-8 minutes.
- Add half-and-half slowly until incorporated.
- Allow mixture to thicken and heat through.
- Stir in cheddar cheese and cook until cheese is melted.
- Ladle into soup bowls.
- Sprinkle with additional cheese, for garnish.
- If desired, sprinkle with parsley, thyme, sage or thyme leaves.
