Applesauce Raisin Muffins
I’ve grown very fond of muffins over the past decade or so. Before then, I never made muffins (and rarely ate them out). But now, I make muffins almost weekly. Whether they have icing or a streusel topping or plain, I enjoy them all! Applesauce Raisin Muffins are heavenly and include cinnamon and allspice along with applesauce and raisins. They’re absolutely delightful and great for breakfast, snacks or even a late night snack!

Some neighbors that live down the street found themselves in difficulty a few months ago. The husband had surgery and the wife slipped on a wet floor and ended up with a concussion and wrenched her wrist. So I volunteered to bring them a meal. I made up a Pork Chop Supper (which included boneless pork chops, potatoes and carrots), an Apple Cheddar Tossed Salad, some homemade bread, and these muffins (for dessert!)
I was completely satisfied with how these lovely vintage muffins turned out. Every bite was scrumptious. The muffins puffed up beautifully when baking and tasted heavenly. If you’re a muffin lover, you’ll enjoy them too!

Applesauce, raisins, cinnamon and allspice spice up these muffins so delectably.
These tasty muffins are just the thing for your morning coffee.
Every bite is so wonderful.
Here’s what I did.
I used these ingredients.
Place unbleached flour in a mixing bowl. (Bleached flour toughens baked goods). Add cinnamon, allspice, and baking soda.
Stir or whisk ingredients to combine.
In a separate bowl, add softened butter and sugar.
Mix with an electric mixer to combine.
Add applesauce and vanilla extract.
Mix ingredients to combine.
Add wet mixture to dry mixture.
Add raisins.
Stir ingredients to combine. Do NOT overmix!
Grease muffin tins. Spoon mixture into muffin tins about 3/4 full.
Bake at 400 degrees for 18 minutes until a toothpick inserted in center comes out clean. Cool muffins in pan for 10 minutes before removing to a wire rack.

Each batch makes 15 muffins.
These muffins freeze and travel well. They’re excellent for a picnic or snacks for sporting events and practices.

Applesauce Raisin Muffins
Equipment
- 1 12-tin regular size muffin pan
- 1 6-tin regular size muffin pan
- 1 large mixing bowl
- 1 medium mixing bowl
- 1 electric mixer
- 1 wooden spoon
- 2 wire cooling racks
- measuring cups
- measuring spoons
Ingredients
- 2 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 1 1/2 tsp. ground cinnamon
- 1 1/2 tsp. allspice
- 1 tsp. baking soda
- 1/2 cup salted butter salted (1 stick)
- 1 cup granulated sugar
- 1 large eggs
- 1 cup applesauce
- 1 tbsp. pure vanilla extract
- 1/2 cup raisins
Instructions
- Preheat oven to 400º.
- Spray 15 regular-sized muffin tins with cooking spray; set aside.
- In a large mixing bowl, combine flour, cinnamon, allspice and baking soda.
- Stir well to make sure spices are fully incorporated.
- In a separate medium mixing bowl, beat butter with granulated sugar until smooth and creamy.
- Beat in egg, applesauce and vanilla.
- Add liquid ingredients to dry ingredients along with the raisins.
- Stir just until ingredients are moistened.
- Do not overmix!
- Spoon batter into prepared muffin tins, filling almost to the top.
- Bake at 400º approximately 18 minutes or until a toothpick inserted in center comes out clean.
- Cool muffins in pan for 10 minutes; remove pan to wire cooling rack to cool completely.
