White Chip Island Cookies
I love these great cookies! White Chip Island Cookies have a tropical island flair with roasted macadamia nuts, vanilla chips, and coconut in the batter. They’re very easy to make up and the consistency is really nice–they don’t run flat when you bake them but, instead, these wonderful cookies hold their shape and have terrific taste.

A few days ago, John wanted to take a batch of cookies with him on an overnight trip to Houston. Usually, I keep my freezer stocked with cookies and he can pull out a container at a moment’s notice. But there was nothing in the freezer so I had to come up with something on the fly.
Aren’t you glad for recipes on the back of packages? This one was on the back of a Nestle’s premiere white vanilla chip package that I had cut out several years ago. When I looked through my pantry and realized I still had enough macadamia nuts for the recipe, this cookie was a go! And the lovely family he gave them to enjoyed them down to the last drop!
If you enjoy bursts of vanilla flavor from vanilla chips, and even more great flavor from coconut and roasted macadamia nuts, then this delightful cookie is sure to please. They also make a great tailgating cookie recipe or to take along to potlucks anytime. I know some people don’t enjoy coconut, but I seriously love the stuff–in cookies, cakes, pies, cobblers, or meat dishes. Give me coconut! Give me roasted macadamia nuts! Give me vanilla chips! Yum, a hundred times, yum!
When I initially posted this recipe in June 2014, I recorded the wrong title. I decided the next time I remade this recipe I would correct the name (according to Nestle’s name) as well as update the pictures. I recently remade this recipe (December 2017) for our annual Christmas Cookie Extravaganza. These cookies were so highly rated by our friends and family that we have had several people told us White Chip Island Cookies were their favorites!

Here’s what I did.
I used these ingredients to make this recipe.
Place softened butter, granulated sugar, brown sugar, egg, vanilla, baking soda, baking powder and salt in a large mixing bowl.
Cream ingredients with a mixer until smooth.
Stir in UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add vanilla chips, roasted macadamia nuts and coconut.
Stir ingredients to combine.
Very lightly spray cookie sheets with cooking spray. Roll dough mixture into balls and place on cookie sheets.
Bake cookie dough at 350 for 11-15 minutes. My oven took 32 minutes! I was running four racks at a time with 24 cookies per rack. I rotated the pans every eight minutes.
Cool cookies before serving. These cookies really hold their texture well.

WHITE CHIP ISLAND COOKIES

White Chip Island Cookies
Equipment
- 2 18x26" cookie sheet pans
- 1 electric mixer
- 1 large mixing bowl
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 nut chopper if macadamia nuts are not previously chopped
- 1 spatula
Ingredients
- 1 2/3 cup UNBLEACHED all-purpose flour bleached flour toughens baked goods
- 3/4 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. sea salt
- 3/4 cup unsalted butter softened
- 3/4 cup light brown sugar packed
- 1/3 cup granulated sugar
- 1 tsp. vanilla extract
- 1 large egg
- 12 oz. pkg. premiere white vanilla chips
- 1 cup coconut
- 1 cup macadamia nuts dry roasted and chopped (measure after chopping)
Instructions
- Mix sugars, egg, butter, vanilla, baking powder, baking soda and salt with an electric mixer until well combined.
- Stir in flour, vanilla chips, coconut, and macadamia nuts with a wooden spoon until combined.
- Roll into balls and place on very lightly sprayed cookie sheets.
- Bake at 350° for 11-15 minutes or until done.
- (My oven took 32 minutes!)
- Rotate cookie sheet pans on oven racks every eight minutes of cooking time.
- Cool completely.

Can u freeze before you bake

I do not usually freeze before I bake. I freeze AFTER I bake. I have had cookies last over a year that way and still be fresh and not dried out. 🙂
