These spectacular brownies are made like a chocolate chip cookie with macadamia nuts in the texture, then they are covered with a rich cream cheese-chocolate chip-powdered sugar icing that is outrageously good! You have not lived until you’ve tried one of these fantastic brownies!
I was in need of a snack to serve for our school board meeting a couple of weeks ago when we were introducing new teachers. I’ve been wanting to try this combination of recipes for awhile, so I went for it. I love it when recipes turn out as winners, and this one sure did! One guy in the meeting had SIX of these brownies and took FOUR home for his wife! (So he said!) No one else had less than TWO!!! Everyone kept going back for more and more and more of these “over the top” brownies!
So even though this batch made 4 dozen, they got eaten quickly! Basically, I used my niece, Heather’s, fantastic Chocolate Chip Cookie recipe (in adapted form), adding macadamia nuts and made it into a brownie instead of individual cookies. Then I used the icing recipe from another cookie I made recently (also in adapted form). The combination was utterly genius as these brownies turned out beyond my expectations!

These are some of the most luscious, mouthwatering brownies you will ever taste!
Chocolate lovers will love these outrageously rich brownies! Decadent, sensational, sinfully rich! How can you go wrong with chocolate chips, macadamia nuts and a chocolate-cream cheese frosting?
Here’s what I did.
Soften butter and put in large mixing bowl. Add brown sugar, granulated sugar, eggs, vanilla, baking soda and salt.
Mix with an electric mixer until well combined.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add chocolate chips and chopped macadamia nuts.
Stir mixture with a wooden spoon to combine.
Spray a 12×17″ baking sheet with cooking spray. Press cookie dough mixture evenly into pan.
Bake at 350 about 20-22 minutes or until toothpick inserted in center comes out clean and brownie is just lightly browned on top.
Meanwhile, prepare Chocolate-Cream Cheese Frosting: Soften cream cheese in a mixing bowl. Add powdered sugar.
Melt chocolate chips over low heat stirring frequently until smooth. (Or you can melt in the microwave if you prefer).
Add melted chocolate chips to the cream cheese and powdered sugar and mix with an electric mixer until well blended.
Cool brownies completely. Spread chocolate frosting over top of the brownies.
Refrigerate brownies after frosting them – about an hour. Then cut into 48 squares. Store in the refrigerator. To serve: place brownies on a tray and watch them disappear! This recipe will certainly provide your chocolate fix and sugar high for the day.

Chocolate Chip Macadamia Crunch Brownies
Equipment
- 1 12x17" cookie sheet pan
- 1 large mixing bowl
- 1 medium mixing bowl
- 1 electric mixer
- 2 wooden spoons
- measuring cups
- measuring spoons
- 1 small sauce pan
- 1 spatula
- 1 nut chopper if nuts are not previously chopped
Ingredients
BROWNIES:
- 1 cup unsalted butter softened
- 1 cup granulated sugar
- 1 cup light brown sugar packed
- 2 large eggs
- 2 tsp. vanilla extract
- 3 1/2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 cups semisweet chocolate chips
- 1 cup macadamia nuts chopped (measure after chopping)
CHOCOLATE CREAM CHEESE FROSTING:
- 8 oz. pkg. cream cheese softened
- 12 oz. pkg. chocolate chips melted
- 2 cups powdered sugar
Instructions
BROWNIES:
- Preheat oven to 350°.
- Cream together the butter, granulated sugar, brown sugar, eggs, vanilla, salt and baking soda with an electric mixer.
- Stir in flour, chocolate chips, and macadamia nuts with a wooden spoon until ingredients are well combined.
- Spray a 12x17” cookie sheet with cooking spray.
- Fit cookie dough mixture into pan.
- Bake at 350° for 20-22 minutes or until cake tester comes out clean.
- Cool completely.
- Frost with Chocolate Cream Cheese Frosting.
- Allow frosting to dry slightly before cutting. (I refrigerated the brownies before cutting into bars).
- Cut into 48 bars. Refrigerate until ready to serve.
