I love peaches, and I love butterscotch, so the combination of the two together is spectacular.
This yummy cake is spiced with cinnamon and butterscotch chips, filled with peaches and pecans and then drizzled with a yummy butterscotch-flavored icing. The icing alone is to die for. I kept licking it off my fingers, and couldn’t get enough of it. Truly, Butterscotch Peach Snack Cake is heavenly. Each bite is so delectable you will be hard pressed stopping at one small piece. Take my advice, make this addictive cake when you’re having lots of company so you don’t end up eating ALL of it yourself!
I was looking through my personal cookbooks a few weeks ago trying to find ideas on how to use up more of our peaches when I came across a recipe I clipped from the Dallas Morning News years ago. I switched out peaches for the apples, added butterscotch chips and a nice butterscotch glaze and the outcome was beyond sensational. I sent this delightful dessert out to John’s office a few weeks ago where it was very well received. Butterscotch Peach Snack Cake is oh, so ooey, gooey and delicious.
It’s time for you to try out this rich, decadent dessert–and just in time for a Labor Day’s picnic! It’s sure to be a crowd pleaser, and if you’re a butterscotch lover like I am, this lovely cake is sure to please. Peaches make it even more wonderful. If you want a fruit-filled cake that’s moist and gooey (not dry and hard), then this cake is one you ought to try. But I warn you in advance–be prepared to salivate over every spoonful! 🙂

There’s actually enough glaze to amply glaze the cake and have a little glaze left over for those who want a little more icing on their cake.
Every bite of Butterscotch Peach Snack Cake is delectable. I didn’t want to stop eating!
Here’s what I did.
I used these ingredients to make the cake.
Place softened butter, sugar, brown sugar, eggs, cinnamon, baking soda, baking powder, salt and vanilla in a mixing bowl.
Combine ingredients with an electric mixer until smooth.
Stir in UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add sour cream, pecans, butterscotch chips and peaches.
Stir ingredients with a wooden spoon to combine. Grease a 9×13″ glass baking dish. Pour cake mixture into prepared dish.
Bake cake at 350 for 30-40 minutes or until a toothpick inserted in center comes out clean. Allow cake to cool before adding icing.
I used these ingredients to make the Butterscotch Icing.
Place butterscotch morsels in a small saucepan and melt over low heat. Add cream, half-and-half or evaporated milk.
Whisk or stir with a spoon until morsels have melted and mixture is smooth.
Drizzle Butterscotch Icing over top of cake.
Butterscotch Peach Snack Cake is sweet enough that it doesn’t really need any extra icing drizzled over top!
But the extra Butterscotch Icing sure adds even more scrumptious flavor to this lovely cake.

BUTTERSCOTCH PEACH SNACK CAKE
(Recipe inspired from the Dallas Morning News)
- 1 stick unsalted butter, softened
- ½ cup sugar
- ½ cup packed brown sugar
- 2 large eggs
- 1 tsp. vanilla
- 2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- ¼ tsp. salt
- 1 cup sour cream
- 12-oz. pkg. butterscotch chips, divided use
- 3 cups peeled, finely diced peaches
- 1 cup finely chopped pecans
- 3 tbsp. whipping cream, half-and-half or evaporated milk
- Preheat oven to 350°.
- Spray a 9×13” glass baking dish with cooking spray.
- In a large mixing bowl combine butter, sugars, eggs, vanilla, baking powder, baking soda, cinnamon, salt, and sour cream.
- Mix with an electric mixer until creamy.
- Add flour, 1 cup butterscotch chips, peaches and pecans and stir with a wooden spoon to combine.
- Pour cake batter into prepared baking dish.
- Bake for 30-40 minutes or until a toothpick inserted in center comes out clean.
- Allow cake to cool completely before drizzling with icing.
- To make icing: Combine remaining 1 cup butterscotch chips with cream in a small saucepan over low heat.
- Stir constantly until the morsels melt and mixture is smooth.
- Drizzle glaze over cake.
