Crème de Menthe Meltaways

Teresa Ambra

Crème de Menthe Meltaways are melt-in-your-mouth good! I love the flavors of chocolate and mint. Furthermore, I love Andes crème de menthe candies! Now that Andes have come out with their delightful crème de menthe baking chips I have been in hog heaven finding ways to use these delicious chips. I have used them in several recipes, like Crème de Menthe Cookie Dough Cheesecake Brownies and Crème de Menthe Chunk Cookies. And now, I’m rolling out Crème de Menthe Meltaways.

I have a couple of really lovely recipes for meltaway cookies. These are cookies that literally melt in your mouth and dissolve as you eat them since they are made with cream of tartar, powdered sugar and oil in the batter. I am STILL trying to use up an abundance of leftover baking stuff and candy from Christmas so I decided to use up one of my last bags of crème de menthe baking chips on a batch of these cookies.

I rolled Crème de Menthe Meltaways in regular sugar but a colored sugar can be used during the holidays. If you like the taste of cookies that dissolve in your mouth, and you enjoy eating Andes Crème de Menthe candies, then you will love these delicious Crème de Menthe Meltaways. Consider making a batch of these cookies the next time you need to make cookies for kid’s activities or just because you want to fill your cookie jar!

When I initially published this recipe in July 2013, I was a little disappointed by the flatness of the cookie. That problem was corrected  when I made the cookies this time (January 2017) by adding an extra cup of flour to the recipe. The cookies didn’t spread to the point where they flattened out, and still had that incredibly good taste of chocolate and mint. Enjoy.

You can roll these in any color of sugar. I used regular granulated sugar but turbinado also works.

Soften butter and place in a large mixing bowl. Add oil. Add eggs, vanilla, powdered sugar, sugar, cream of tartar, salt and baking soda.

Mix with an electric mixer until smooth. Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add a package of Andes creme de menthe baking chips.

Bake at 375 for about 12 minutes or until done. My oven usually takes longer.

  • measuring spoons
  • 1 spatula
  • 1 small bowl

Ingredients

  • 1 cup unsalted butter softened
  • 1 cup vegetable oil or use avocado oil or coconut oil
  • 1 cup granulated sugar
  • 1 cup confectioners’ sugar sifted
  • 2 large eggs
  • 5 1/2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 1 tsp. baking soda
  • 1 tsp. cream of tartar
  • 1 tsp. salt
  • 1 tsp. vanilla extract
  • 12 oz. package Andes Crème de Menthe baking pieces
  • 1/3 cup granulated sugar or turbinado sugar to roll the cookies in

Instructions

  • Combine butter, oil, sugar, confectioners’ sugar, eggs, baking soda, cream of tartar, salt and vanilla in a bowl.
  • Mix with an electric mixer until creamy and smooth.
  • Stir in flour and Crème de Menthe baking pieces with a wooden spoon until very well combined.
  • Using a mixer at this point toughens cookies.
  • Shape cookies into balls.
  • Roll in granulated or turbinado sugar.
  • Put 2" apart on cookie sheets that have been sprayed with cooking spray and bake at 375°for 10-12 minutes.
  • Rotate cookie sheets on oven racks half way through baking time.
  • Cool.

Notes

NOTE: My cookies took longer to bake. I think they took closer to 17 minutes.

NOTE: It is imperative that the butter be just softened, not melted for this recipe. Melting the butter changes the whole texture of the cookie. If that happens, chill dough for an hour in the refrigerator before rolling into balls.
