Sausage Apple Pancakes
Sausage Apple Pancakes are absolutely superb. In fact, they are some of the most mouthwatering pancakes I’ve ever made. If you want comfort food, these pancakes have it all. The sausage and apple flavors blend so well with cinnamon, nutmeg, vanilla flavoring and maple syrup drizzled over top. I was drooling over every bite.

These pancakes are actually quite hearty and fully satisfying as a breakfast or dinner main dish. I filled them with pieces of sauteed apples, and little bits of mild, bulk pork sausage. They turned out quite sumptuous and tasty. We served Sausage Apple Pancakes as a breakfast for dinner menu for our Friday night group. Without exception, everyone loved these fantastic pancakes. They kept telling me, Teresa, these pancakes are good, really good….over and over and over again.
I made one whopper of a pancake for myself. It was so filling that I could barely eat a bite of the Fried Potatoes, fruit or sausage I had on my plate. And I love my Grandma’s recipe for Fried Potatoes! Truthfully, I just couldn’t eat anything else because I wanted to savor the deliciousness of these heavenly pancakes. They were totally awesome.
It’s a no-brainer that the sausage has to be pre-cooked when making this recipe. I found that cooking the apples was necessary too. Otherwise, they may be too crisp. If you’re having company for breakfast, consider trying out Sausage Apple Pancakes. Everybody will love them!
I initially posted this recipe in December 2013. Quite frankly, my pictures were deplorable. No kidding. I remade this recipe (October 2019) and made wholesale changes. It’s not that the first rendition was bad, but I thought a few things would make it better.
Instead of cut-up sausage links, I used mild, bulk pork sausage that was cut up in tiny bits. The sausage bits spread throughout the pancake better that way. I also diced the apples instead of slicing them. Instead of gluten free flour, I used regular flour. Plus, I started with a really fluffy Buttermilk Pancake base before adding the sausage and apples. Everyone thought the flavors and texture were marvelous.
These pancakes are terrific for a company breakfast. That’s why I recommend you pull them out for your Thanksgiving or Christmas breakfast or brunch menu. Drizzled with maple syrup (I don’t use corn syrup), they are absolutely irresistible. I kid you not–you’ll be drooling from the first bite–just like I was.
Sausage Apple Pancakes turned out divine!
I loved the heartiness of these pancakes, and the flavors mixed together so very well. Drizzle some maple syrup over top and you’re good to go.
These pancakes are terrific for holidays like Christmas or Thanksgiving.
Here’s what I did.
I used these ingredients.
Saute sausage over medium heat in skillet.
Add apples.
Stir ingredients to combine and saute about 5 minutes until apples are tender. Drain grease. Set aside.
In mixing bowl, combine UNBLEACHED all-purpose flour, sugar, baking soda, baking powder, salt, cinnamon and nutmeg.
Stir ingredients to combine. Set aside.
In a separate bowl, melt butter.
Add eggs and buttermilk or soured milk. I ran out of milk so I used half-and-half to sour the milk. It was a lot thicker.
Stir ingredients to combine.
Combine liquid ingredients with dry ingredients.
Add fried sausage and apples.
Stir all ingredients to combine.
Heat skillet or griddle to medium heat. Add avocado oil or butter and fry pancakes about 5 minutes. This was a whopper sized pancake.
After about 5 minutes the top of the pancake starts getting holes in it like this. That’s an indication that you can turn the pancakes over and fry the other side.
Flip pancake over and cook other side an additional 3-5 minutes.
These pancakes are about 5 to 6 inches in diameter.
Place pancakes on a cookie sheet and keep in a warm oven until all the pancakes are done.
I served these scrumptious pancakes drizzled with maple syrup. My pancake was this whopper!

SAUSAGE APPLE PANCAKES
(My own concoction)
Sausage Apple Pancakes
Equipment
- 2 large skillets or griddle
- 1 spatula
- 1 large mixing bowl
- 1 whisk
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 sharp knife to cut apples
- 1 hamburger chopper (to break the sausage up into tiny pieces while cooking)
- 1 medium mixing bowl
Ingredients
- 2 large gala apples peeled and diced
- 1 lb. mild bulk pork sausage cooked and drained (can use turkey sausage)
- 2 cups UNBLEACHED all-purpose flour or gluten free flour (I prefer Cup4Cup)
- 1/4 cup granulated sugar or maple syrup
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. sea salt
- 1 tsp. cinnamon
- pinch nutmeg
- 2 1/4 cups buttermilk or soured milk
- 2 large eggs room temperature
- 1 tsp. vanilla extract
- 1/4 cup unsalted butter melted and cooled
- 1/2 cup avocado oil butter, or coconut oil for frying pancakes (or as needed)
- 2 cups maple syrup for topping
Instructions
- Combine flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg in a mixing bowl.
- Stir well to thoroughly mix ingredients.
- In a separate bowl melt butter in microwave.
- Cool slightly.
- Add buttermilk, eggs and vanilla.
- Whisk until ingredients are combined.
- Meanwhile, fry sausage over low to medium heat in skillet until browned.
- If you have a hamburger chopper, break the sausage up into very small pieces with the chopper.
- Add apples and cook until apples are tender, about 5 minutes.
- Drain any grease.
- Remove sausage and apples and place on paper towel-lined plate to drain.
- Combine flour mixture, egg mixture and sausage-apple mixture and stir until just combined.
- Do not overmix the batter.
- Clean skillet and add oil or butter for frying.
- Pour pancake batter into skillet or griddle and heat on low to medium heat.
- Cook until bubbles appear on the surface of the pancake, about 5 minutes.
- Turn pancakes over and continue cooking on opposite side until pancakes are done—about 3-5 minutes.
- Best served hot with maple syrup.
- If necessary, keep pancakes warm in a low oven until all pancakes are cooked and ready to serve.

- 2 Gala apples, peeled and sliced

- 2 tbsp. butter

- 2 eggs
- 1 ½ cups milk
- ¼ cup canola oil
- 1 tsp. cinnamon
- 1 tsp. vanilla
- butter
- Sauté apples in butter about 5-10 minutes.
- Add sausage and cook an additional 5 minutes or so to heat through.
- Mix remaining ingredients with a whisk.
- Add apples and sausage.
- Heat large griddle or cast-iron skillets to medium heat.
- Pour pancake mixture into griddle and fry about 5-8 minutes per side until bubbles appear on the top.
- Flip pancakes over and grill remaining side.
- Serve with maple syrup.
