A-M-A-Z-I-N-G doesn’t even begin to describe the taste of this dessert. The icing tastes heavenly and it’s very thick, making these bar-type cookies rich–maybe a little too rich–decadent, and drool-worthy.
I probably should have entitled my blog: “Icing Queen” because I love icing and frosting on cookies, bars, and cakes. If there’s a way to add it, I’ll find a way. 🙂 The thicker and more lavishly the frosting is added to the goodie, the better I like it.
Yes, I have an insatiable sweet tooth. Peach Bars with Caramel Creme Frosting have everything I love….lots of fruit and nuts, and then slathered with entirely too much icing. Instead of allowing these bars to cool like I should have, I cut into them right away because I wanted to sample them hot! Yum.
When I was looking through my family recipes for ways to use up all of our bushels of peaches, I found one given to me by a co-worker’s wife when I worked at Dallas Baptist University. He had brought this heavenly apple cake in once for a luncheon and I begged him for the recipe. I switched around a few things and made it with peaches from our own peach trees. Peach Bars with Caramel Creme Frosting turned out spectacular and that’s not an exaggeration.
If you like icing-topped cookies or cakes, and caramel icing made with marshmallows at that, then you need to make these bars. Your family will be in seventh heaven pleading with you to make this lovely dessert often. While this probably can be made with either frozen or canned peaches, there’s nothing quite like fresh peaches in a dessert. Regardless, be prepared to drool…..
When I initially posted this recipe in September 2014, I had real difficulty getting my camera to focus properly so I ended up using my back-up iPhone pictures. Unfortunately, iPhones always put a hue across the pictures that look like a cataract or something across the lens. They are not great for taking food pictures! I recently remade these delicious bars and finally managed to get a few decent pictures with my Canon. Enjoy.

Prepare for a sugar overload after a bite of these scrumptious Peach Bars with Caramel Creme Frosting.
Here’s what I did.
I used these ingredients for this recipe.
Place softened butter in a mixing bowl. Add sugar, eggs, cinnamon, nutmeg, baking powder, baking soda and salt.
Mix with an electric mixer to combine well.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add finely, diced peaches and walnuts.
Stir ingredients with a wooden spoon to combine.
Grease a 9×13″ glass baking dish. Spread peach mixture into prepared dish.
Bake at 350 for 45-55 minutes or until a toothpick inserted in center comes out clean.
I used these ingredients to make the frosting.
To make frosting: Melt butter in a saucepan. Add brown sugar and cream and bring to a boil.
Cook a few minutes stirring constantly. Turn heat to low.
Add marshmallows and whisk or stir until they are completely melted. Remove from heat.
Remove caramel mixture to mixing bowl. Add powdered sugar and vanilla.
Beat with an electric mixer to combine all ingredients.
Spread icing over top of cooled cake. Allow icing to set, about 15 minutes before cutting.

PEACH BARS WITH CARAMEL CREME FROSTING
(Recipe adapted from Marla Downing, Ovilla Road Baptist Church, Ovilla, TX; when her husband Ed worked with me at Dallas Baptist University, Dallas, TX)
Peach Bars with Caramel Creme Frosting
Equipment
- 1 9x13" glass baking dish
- 1 large mixing bowl
- 1 electric mixer
- 2 wooden spoons
- 1 sharp knife to cut and pare peaches
- measuring cups
- measuring spoons
- 1 medium sauce pan
- 1 spatula
- 1 regular knife or icing spreader
Ingredients
PEACH BARS:
- 2 1/2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
- 1 1/2 cups granulated sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. sea salt
- 1 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 stick unsalted butter softened (1/2 cup)
- 2 large eggs
- 3 cups peaches peeled and finely diced
- 1/2 cup walnuts chopped (measure after chopping)
CARAMEL CREME FROSTING:
- 1/2 cup unsalted butter (1 stick)
- 1 cup light brown sugar firmly packed
- 1/4 cup heavy whipping cream half-and-half or evaporated milk
- 1 cup miniature marshmallows
- 2 cups powdered sugar
- 1/2 tsp. vanilla extract
Instructions
PEACH BARS:
- Mix sugar, baking powder, baking soda, salt, cinnamon, nutmeg, butter and eggs in a large mixing bowl.
- Mix with an electric mixer until well combined.
- Stir in flour, peaches and walnuts with a wooden spoon until ingredients are well mixed.
- Grease a 9x13” baking dish.
- Spread ingredients into dish and level with a knife.
- Bake at 350° for 45-55 minutes or until a toothpick inserted in the center comes out clean.
- Cool.
- Frost with Caramel Crème Frosting.
CARAMEL CREME FROSTING:

- Add brown sugar and cream; mix well.
- Heat to boiling.
- Cook a few minutes stirring constantly.
- Turn heat to low.
- Add marshmallows and stir until they melt.
- Remove from heat.
- Remove caramel mixture to mixing bowl.
- Add powdered sugar and vanilla.
- Beat with an electric mixer until well mixed.
- Spread on cooled cake.
- Allow icing to set at least 15 minutes before cutting into bars.

Thank you so much, Joanne! We used to have 6 fruit bearing peach trees on our property until we moved last summer. I was always trying to find ways to use them up. This is one of those decadent recipes that you’ll drool over. 🙂
